I had a quick-prep dinner of tofu/cashew spread from the co-op spread onto toast with a substantial lettuce leaf. Gwyn made our version of chicken nuggets, which takes our leftover roasted chicken from the meat CSA, shreds it, and adds it to a chicken croquette recipe we found on food network. We modified the recipe a bit by adding loads of chopped broccoli, some parmesan cheese, and rolling the croquettes in panko instead of regular bread crumbs. They must be made hours before and left to chill in the fridge so that they keep their shape - Gwyn rolls them into a long sausage shape, chills, then cuts them into discs to ready them for the panko and frying.

The boys luuuuuuved them. Gwyn gave them five each, and they asked for more. He said he put way more broccoli in these than in the first batch he made, and the kids just devoured them. I would not be surprised if Mr. Elliot asks for them for his birthday dinner tomorrow night and luckily we will have plenty in the freezer ready to meet that request.

Transplant 1 lasted 21 years (Lucy: 1991 - 2012), failed due to Transplant glomerulopathy
5 weeks Haemo 2012
Transplant 2 (Maggie) installed Feb 13, 2013, returned to work June 17, 2013 average crea was 130, now is 140.
Infections in June / July, hospital 1-4 Aug for infections.

Over the years:  skin cancer; thyroidectomy, pneumonia; CMV; BK; 14 surgeries
Generally glossy and happy.

We are trying to rid the freezer of as much meat from the meat CSA as possible, then if we have the spare dosh (this is a large 'if') we will restart the meat CSA. They give the best eggs as part of their poultry share, and extra dozens only cost $2!!! Gwyn defrosted lamb stew meat, a beef steak, and two ham steaks.

Anyhow, Gwyn took lamb stew meat out the other day, quickly fried it, added a jar of spicy artisan korma I got on a ridiculous sale at Whole Foods, and cooked it on low heat overnight by placing the cast iron skillet in the oven. He hasn't eaten that yet, but tasted it and says it's absolutely superb.

Tonight, I decided to help with dinner as Gwyn called me in a panic, stuck in traffic. We decided to make a spaghetti carbonara for him and the kids using the ham instead of trad bacon or prosciutto. How hard is it to fry a ham? When you are an easily nauseated vegetarian, it's trickier than it sounds. I grabbed my food handling gloves, bunged it in a pan, and flipped it a few times. There was a hard circle in the middle, with a mushy center, and when Gwyn got home, I asked 'is that stuff bone marrow' and he nodded and I was off for a lie down! He added finely diced pole beans to the carbonara. The kids raved about it. I also sliced cherries for them. I think these may be the most delicious cherries I've ever tasted, and the Whole Foods is selling them at $1.99/pound. We are going to stock up and attempt our own version of Cherries Garcia ice cream. My dinner was nothing special - two Dr. Praeger's spinach patties fried in olive oil, sour cream on the side, and a large measure of cherries. I thoroughly enjoyed it, though.

Last night was rice pilaf with chickpeas, cumin, garlic, shallots, and homegrown tomatoes, red jalapenos, and Thai chiles. I was going to put a fried egg on top, but I was too lazy.  :oops;

Not supper, but breakfast I had to share.

I was going to just make a fried egg and tomato sandwich, but I got a little carried away. ;D I ended up with a quasi- fried egg and tomato banh mi: two fried eggs with slightly runny yolks on a sourdough baguette, with homegrown sliced tomato, homegrown julienned jalapeno, mayo, fish sauce, and sriracha chili sauce. So ridiculously good (and messy!).

okarol, I make yellow split pea soup. I use a package of peas.  Add water salt (in Newfoundland we add salt beef) ham works well as well, black pepper and chopped onion.  Let boil until peas are almost cooked. Have to keep an eye on it because you may need to add more water as the peas cook - it gets thick. I add chopped carrot, turnip, parsnip and let boil until that is cooked.  You have to stir ocassionally and not have temp to high because it is very easy to burn it on the bottom of the pot. I make dumplings and add - about 1 cup flour, 2 tsp baking powder and water . Drop by spoon full into the soup.  Cover and let cook for 10 minutes (Don't remove the cover while the dumplings are cooking)

Last night was weight watchers homemade chicken noodle soup and a lettuce and tomato sandwich on whole grain bread.  I am trying to get back to losing some weight!!

I know what you mean.  I have been waiting for football season to start so bad!!!!!!!  If my G/F was at home, and saw what I had to eat watching the games, she would have killed me!  She thought I was going to be a "good boy" since I ate well, watching the ALABAMA game and the Tennessee game the day before. 

I won't tell you what I had, I'll just stop at CHEESESTEAK!  enough said!!!???

I finally got back to cooking tonight, and I made really good jerk chicken and rice. It was super tasty, and I have enough left for dinner for the rest of the week.  :bandance;

I went to the downtown Los Angeles Art Walk tonight. They have about 50 food trucks - it's a once a month event. I ate some yummy falafel in a wrap, it was very spicy and good!

On Thursday I made a big pot of pozole with chicken, canned hominy, Mexican squash, and a few different kinds of chiles. I was expecting it to last all weekend, but I forgot how quickly food goes when three people are eating it (including my brother, the human vacuum). I was expecting to get at least three bowls for myself, but when I went for the third bowl on Friday night, I found my brother had eaten the last of it - and left the pot out for me to wash!  :stressed;

I'm thinking of making chicken larb this week. You think if I make it super-hot I'll be able to keep it all to myself?  :rofl;

I had pozole about 2 weeks ago except it with beef and shredded cabbage. Nothing like eating homemade  :2thumbsup;

As I was coming out the Nephrologist office, I thought the sky was falling.
Knew I was going on dialysis since November 1999.
Had a fistula put in January 2000.
Been on 4-1/2 hour dialysis since August 28, 2001. (They took out 35Kg that single week)

I made a lamb curry served over basmati rice.  I was never really a potatoes sorta girl, so I don't get bummed by the no potato thing.  I do love rice, though, and basmati rice is so fragrant and lovely.  I cheated and got some store bought naan bread.

Oven roasted chicken breasts, drowned in lemon pepper, fried rice, Bob had creamed corn and I had a very small salad. But THEN, I decided I needed a cookie ( or two) so I did up some home made cranberry/chocolate chunk cookies. What a downfall, but, boy, they were good. !!!

I love talking food.....  and! i love breakfast for dinner better than breakfast for breakfast!  So, beings its lunch time right now, i'll tell what we're having for lunch...  Albicore sandwhich with little green onions, and a piece of romane lettuce on it.  Hubby (the D man) is getting his with some protien powder and flaxseed meal on his as well...shush!!  A couple fresh pinaple chunks and swig of water.. thats about it.. CAnt wait for figuring whats for dinner :)
