Mixed peppers, broccoli, cauliflower, carrots, chopped onions with baby corn & chestnuts, mushrooms and oriental noodles all mixed with Olivie oil to stir fry. Then put smoked sausage in it! Put over rice and PRESTO, you have a tasty meal and very healthy too! Well some of it might not be, but the majority is!

Last night we made empanadas which is a lot of fun. I buy the pre-made wrappers and then we all fill them with whatever we like. We had beef and chicken and also made some for desert which we used blueberry or apple pie filling. YUM!

is supper, like, the evening meal? On Wednesdays Gregory works late, so I stay late at uni too. And tonight I'm getting Indian takeaway on the way home. mmmm! He hates indian so I only get it when we're eating separately...
I'm gonna have lamb korma and rice and I think the eggplant thing... whatever its called.

1986: kidney failure at 19 years old, cause unknown
PD for a year, in-centre haemo for 4 years
Transplant 1 lasted 21 years (Lucy: 1991 - 2012), failed due to Transplant glomerulopathy
5 weeks Haemo 2012
Transplant 2 (Maggie) installed Feb 13, 2013, returned to work June 17, 2013 average crea was 130, now is 140.
Infections in June / July, hospital 1-4 Aug for infections.
Over the years: skin cancer; thyroidectomy, pneumonia; CMV; BK; 14 surgeries
Generally glossy and happy.

Korean barbecue! Homemade! By me!
Spicy pork, kimchi, spicy cucumbers, sesame bean sprouts, marinated peppers, and lots of rice.
And Wednesday, something similar, wrapped in cabbage leaves.
Renal-friendly? I don't know! No dairy, no additives, all the vegetables are okay, not a lot of soybean paste. It works for me!

Not dinner, but my favorite quick snack at the moment: asparagus quickly steamed in the microwave, dipped in Japanese Kewpie mayo.

stir fry veggies with chicken and yakisoba noodles. Lots of hot peppers added to my bowl and siriachi.
I like it spicy.
I think tomorrow night will be burgers and maybe stir fried brussels sprouts. I am having hankerings for brussels sprouts. My husband thinks I am weird.

tonight was pork filled egg rolls. Frozen and from Wal Mart, really not all that good, but when you are on the run, you pick up fast food. I just love this thread.

Recently I made blacked tilapia with (leeched) roasted potato French fry-like things. The tilapia was a 6 ounce, frozen, vacuum sealed, sushi-grade filet from the Korean market. I coated it in a mixture of spices - chipotle powder, cayenne, garlic powder, black pepper, thyme, Old Bay, salt - and blackened it in a very hot cast iron skillet, and then spooned clarified butter over it.
The potato was a smallish Yukon Gold potato, cut into matchsticks, soaked in 3 changes of water over 16 hours, then boiled in fresh water, then tossed with oil and spices and roasted until crispy.

I must be going thru a phase. I have a lot of weight to lose (about 100 pounds or more) so I can get on the transplant list someday and I've been eating the same ol same ol pretty much at home, rice and ground beef and some veggies and once in a while fruit. (Sick of Chicken right now) I do use homemade no salt beef or chicken broth to cook the rice in but I don't eat starchy root veggies or any grains except white rice. I use spices a lot for flavor. I use cream in my coffee in the morning.
It's like I'm afraid to eat most foods now days even in moderation. I've cut out all processed foods except the white rice.

Gah, it is past 5PM and I cannot answer the dinner question!
Last night I got the boys mac and cheese from Noodles (one of those new breed of fast food places that actually tries to make entrees that are edible). They sent me a voucher in the mail, so it was free! I did not order anything for myself, though was tempted by their Truffle Mac N Cheese where they add truffle oil and portabello mushroom slices.
I have two freezers full of items that Gwyn made before he left for me to heat and serve, so the boys are probably going to go that route tonight.

Tonight I"m having Scallops with Vodka Lemon Cream Sauce. And a salad with some sourdough bread. if the scallops turn out great the recipe will be on my blog I"m kind of just winging it.
Riverwhispering. good job on cutting out the processed foods. You might want to check out my blog for renal friendly recipes that are made with real food not processed foods for ideas.

I made this! I marinated the chicken in a teriyaki sauce, then I cook it on the stove top, cooked up some white rice and steamed some carrots, add a few crunchy noddles and of course a fortune cookie and BAM its just like take out!!

today i went to Cosco and got a white pizza with big chunks of mozerella cheese and slices of tomato w/ spinach...... just heat and eat, it liooks really good

The Scallops with Vodka Lemon Cream sauce were amazing. And harldly any cream only 1 tbsp per serving.
Vodka on the other hand 1/3 of a cup but I let the alcohol boil away.
I will be posting it on my blog in April. time frame..
tongiht we are having chicken wings and salad.
2 types of wings: Spicy and Honey Mustard all home made so the sodium is controlled.

Pizzia with Canadian Bacon and Bell peppers, onions and ham bits. It is one of those store bought that I add to. Pretty good stuff.
