Grilled salmon (bought already cooked) with a huge plate of homemade roasted veggies...squash, fennel, red onion and brussel sprouts...done with olive oil and some balsamic vinegar then fresh grated ginger on top.

The males had salmon, white rice, and peas. I had the most ridiculously decadent burger - a walnut burger patty from the coop (that makes about 5 different varieties of veggie burgers, all of them exquisite) with soy bacon, gouda cheese from the local artisan cheese maker, lettuce, tomato, and hamburger rolls from a local bakery.

For dessert, fresh strawberries with cream for me, strawberries, whipped cream, and chocolate for everyone else.

Sushi...California rolls, spicy crab rolls and for old times sake three small slices of raw white tuna.  Also a crab and seaweed salad.  Dessert...20 grams of Lindt dark chocolate with orange bits in it.

Diagnosised FSGS via biopsy 11/2006
Started Dialysis 5/2009
hemo-dialysis except 9.09-6.10 = peritoneal then back to hemo
currently in center hemo 3x per week
Evaluation for transplant July 2010
Almost received transplant 8.13
repeated calls and admissions for transplant since then but no kidney yet
3.1.14 got ideal kidney and having exceptional recovery - creatine went from 8.5 to 1.1 in less than 2 weeks.

Any time lunadatura...I love the taste of pretty much every food there is but I'm grossed out by the overall unhealthiness of the average North American diet and can't imagine eating most of what people take to be "delicious".

Tonight's dinner is homemade spicy maroccan lamb stew...very little lamb and masses of veggies - carrots, mushrooms, rutabaga, squash, zucchini, sweet potato, chick peas, fennel, seasoned with cumin, cloves, cinnamon, coriander, cardamon and scotch bonnet peppers - served over organic whole wheat couscous with plumped golden raisins and garnished with toasted sliced almonds.

Cheese pizza from Whole Foods (it costs a dollar less on Wednesdays) and a fresh fruit melange (mangoes, blueberries, strawberries, cherries). I was not at Whole Foods to supervise, so could not stop Gwyn from buying both a carrot cake and a cherry pie on sale. We had about a third of the carrot cake. Yes, I did tell him I had been craving carrot cake, but did he need to buy an entire cake? And the cherry pie came out of left field....

I took out my cast iron skillet, put in a good measure of olive oil, a smushed garlic clove, some fresh green beans, a slice onion, salt, pepper and panko, stirred it all up and roasted the whole thing, then put the mixture over rigatoni.  Sprinkled a little fresh thyme from my garden on top, and it was scrummy.  For dessert we had a bowl of fresh strawberries, also from my garden.

A mixed red and white quinoa salad with lots of stuff in it...parsley, mint, cilantro, tiny bits of red onion, diced cherry tomatoes, chopped dried apricots, toasted pecans (bought natural with no salt and toasted dry in a skillet), diced jicama for more crunch, diced avocado and a dressing of lime juice, raspberry red wine vinegar, extra virgin olive oil, chipotle powder, grated ginger, grated garlic.   NOT RENAL FRIENDLY but incredibly tasty and healthy.   So many possibilities of what could be added or subtracted depending on personal preferences.

Last night I had leftover steak tacos and spicy popcorn. I'm just starting to take Megace, so hopefully my appetite will get better and I'll be more motivated to cook.

Uninterrupted in-center (self-care) hemodialysis since 1982 -- 34 YEARS on March 3, 2016 !!

Admin for IHateDialysis 2008 - 2014, retired.
Jenna is our daughter, bad bladder damaged her kidneys.
Was on in-center hemodialysis 2003-2007.
7 yr transplant lost due to rejection.

The boys had fried eggs on toast, mixed veg, watermelon, and cherry pie with homemade vanilla ice cream. I had pasta with a tomato cream sauce and parmesan cheese. I managed one slice of watermelon, but my teeth have become really sensitive to cold and/or sweet, so it was tricky to eat. I passed on dessert.

We walked to one of the restaurants participating in dining week last night. The boys were so good. I am a sucker for fusion restaurants, and this was Latin Fusion. Gwyn ordered carne asada, I had the veg burrito (only veg choice on prix fixe) which was quite unique, and had loads of julienne vegetables in there. For starters, I had a blue cheese salad, while Gwyn chose the butternut squash soup. (Those were both excellent.) They had no kids menu, so the boys split a snapper wrapped in banana leaf with a coconut sauce, on a bed of sweet potato discs. My little boy loves salsa! I am so proud. He could not get enough of it. I guess there was no baby-switching at the maternity ward after all!!! :rofl;

For dessert, vanilla flan for me (with these amazing candied vanilla strands on top), sorbet trio for Gwyn, and we let the boys share an insane banana/chocolate duo (banana cake with chocolate ice cream, and chocolate cake with banana ice cream). The nice thing was that the desserts were not those obnoxiously portioned beasts you get at some establishments. We nearly finished everything.
