white 2% milk! Oh man what I would give to be able to drink liter after liter of milk!! Ahhh MILK!! It does the body good! :2thumbsup; It had to be the hardest thing for me to give up! That is the whole reason why my phosphate used to be so very very high! Man I felt like they were asking me to cut off my right arm since I didn't like to drink anything else BUT milk!

I got rid of all my cereal since I had to give up milk. Now I can have about 125ml every day with a binder. I also miss my Mac&Cheese, Pizza, my Banana Strawberry Orange Juice, and I miss my chocolate mousse!!! Oh ya and Mr.Noodle chicken noodle soups and borsch!!!

This thread is making me so hungry for such naughty things I can't have. :lol; Next time someone ask's me what do I wanna do after I get a transplant, i'm gonna say the first thing I wanna do when well enough, is go out to a buffett and have everything I couldn't.. with a gallon of 2% milk for my drink. :clap;

I still drink coke. It is one thing I will never give up ( I hope).
I eat almost anything except for cheese, but in moderation and I'm aware of what I'm eating and won't go overboard between dialysis sessions.

I heard that Idoho potatoes are the highest in Potassium. Is that true? Will leaching help with all potatoes? I am asking cuz here we have New York Fries where they always have their potatoes sitting in water before they use them. But they are Idoho potatoes.

There are going to be slight differences in K amounts in different potatoes. However they are so close in amounts it doesn't really matter.

AT first two things were difficult to give up. Orange juice and milk were my 2 favorite drinks. Fortunately since I went to PD I "m allowed OJ again. But Milk is still a no no. A tall ice cold glass with Oreo cookies.

Maybe but not at this hour. Every place that I know of that sells chili cheese fries is closed by 9:00pm. :'(

I always have a craving for a nice, fresh, toasted bagel, slathered with cream cheese, piled high with smoked salmon, with capers and just a touch of minced red onion.
No kidding, I can't even have bagels and salmon in my house, I'd eat it for breakfast, lunch and dinner. I love them.

Crave but can't have - mint! I'm allergic. Haven't had a peppermint candy cane since I was 8. Boy, I used to love those. . . and those little andes dinner mints with the square choclolate outsides. .. . and Peppermint patties. . . . Almost 3 decades without mint - you would think my taste buds would have given up wishing for it by now.

my hunny misses his mac and cheese and the fruit-he used to come home from work and eat four bannanna and mayo sandwhiches at least 3 days a week for lunch,and cereal out of my mixing bowl...lol he still eats cereal but with just enough water to get it wet and lots of sugar.

Glitter and Kitkatz, Are banana and mayo sandwiches really good? I've tried peanut butter and bananas on sandwiches, and I love those, but I've never tried banana and mayo. I'd try it, though, I love bananas, and I love mayonnaise, so it sounds good to me.

I never liked it before I got sick, but now I crave the yummy crunch of ice nonstop. Over half my fluids are taken in ice form.
The nurse had the nerve to tell me that ice counts as water. Really?
I have managed to keep good potassium despite eating alot of tomatoes/spagetti sauce, I guess I don't absorb it as much. I also crave nuts, green leafy foilage, and edimame.

Mmmmmmmm Spaghetti. I could possibly eat spaghetti everynight for supper and never get tired of it... i'm wierd like that, but spaghetti rules. I make sure I take my binders b/c i'm not cutting out spaghetti, wooooooooooooo!

Lately I'm craving Lay's Hot and Spicy Barbecue potato chips. It's weird because I usually don't like barbecue potato chips, but I tasted this kind at work and now I could eat them by the bagful all day long.
Your taste sure does change on dialysis, all kinds of things that I used to like I don't want anymore, and some things I didn't used to like I crave all the time.

Lets try chocolate, macadamia nuts, and at Christmastime almond roca. I've been liking ice cream lately too but I'm really picky about the brand. I also crave anytime away from work but that can't be eaten.

are you people still craving??? didn'tyou read my post/?? you can eat anything and everything you want as long as you take your binders...my labs are always good, so get to know yourselves and enjoy a great meal.

That is so NOT true for everyone, Rolando. Me for example, while I was on hemo, I tried doing that, my phosphorus still was uncontrollable. When I switched to PD, I decided to try that again, again it didn't work for me. As it does not work for everyone. Everyone's body is different. So please don't assume everyone can do it just because you can. It's still not good for you, but hey.. enjoy it while you are able to do it.

Binders do not always take care of it because all too often people underestimate the amount of phosphorus they are eating or they eat a meal or meals loaded with too much phosphorus for the binders to work effectively for that meal.

Rolando, I know you have the zest for life. Reading "Is your PCP/HMO trying to kill you? Beware! Be aware!!!" http://ihatedialysis.com/forum/index.php?topic=2339.msg32665#msg32665 tells part of your story.
As you know, relying on binders is not going to help with potassium, regardless of how many pills you take.
But as you stated in a different post, you only eat one meal a day.
In any case, this is an interesting discussion. Is it a food we crave or is it a gluttonous portion of a food we crave?
If we manage our renal diet correctly, we can indeed eat most foods we crave. Just not every day, and not always "super-sized." It's about portion control.

i saw my neph today and told him i had been craving for a dr pepper. i said i had one the other day with my lunch and i took extra phoslo. he about chewed me out when i said that. not about drinking the dr pepper but taking an extra phoslo. he said i shouldn't take extra phoslo because phoslo is basically calcium just like a tums. and too much calcium is bad for you and you can get calcium deposits. he said if i need to take extra binders he is going to consider switching me over to renagel since my calcium is looking good.
by the way....my phosphorus last week was 10.1. :o :o :o :-[ :-[ :-[

Tubes, I did not know that. I have both Renagel and Phoslo on hand. So, the next time I need an extra binder I'll take Renagel.

i take a crapload of renagel and so far i have had no side effects, like martha stewart says... it's a good thing. btw i like this emoticon so i use it a lot: :rofl;

Seriously, that comment about PhosLo was very important. We can match binders to what Rolando eats because he uses Renagel. It does not leave the digestive tract. If we miscalculate (guess wrong) either the phosphorus goes too high or too low. On the other hand, with PhosLo which Rolando used to use before calciphylaxis hit) the excess calcium does indeed enter the bloodstream, as can the calcium and the heavy metals in other antacid type binders. Not good!
Renagel gives us some freedom to manage ourselves.

Renagel gives me diarrhea. Phoslo plugs me up. So, I mix the two and it is better. Not perfect, but better.

My husband takes both 1 fosrenol and 2 phosLo per meal-taking just fosrenol wasn't as effective and just phoslo his calcium was too high

Yesterday every time I passed an apple on someone's counter, I wanted it. A big, shiny red apple. So when I got home I sliced one up and ate it with a little Splenda over it. It was yummy!

I've decided I can drink Rice Milk in place of dairy milk. For the first time in my entire life I have no dairy milk in my refrigerator.
Rice milk comes in Carob flavor. I heat it up in the microwave and pretend it is Hot Chocolate. Yumm

So at her hospital exit review session after the transplant - what was one thing
they told her NOT to have??? Cola! They said soft drinks have too much phosphorus
for kidney patients! Then they started her on potassium and phosphorus nutritional
supplements because the new kidney was throwing off too much. Crazy huh?

Wow, how weird! My doctor told me I could drink as much soda as I wanted since my phosphorus was so low and it's high in phosphorus. I choose to drink Diet Dr. Pepper at home, but if i'm at a fast food place or restaurant I drink reg Dr Pepper. (However, to me, they both taste the same.)

The doc told you what?? But what about all the calories in soda, isnt he concerned that you might gain weight from it being so high in sugar? Damn, i wish someone would tell me to drink all the soda i want, lol, :P

I've always watched my diet, eating lots of fresh fruit and vegetables along with plenty of whole grain bread...you know, the kind of stuff that's supposed to be good for you. My beverage of choice has always been milk.
The pre-renal diet is hard to get used to simply because it goes against all of the healthy eating concepts I've always lived by. I don't really like fast food, and I don't have a sweet tooth. I've always liked good, healthy food (I've never met a bean I didn't like and am particularly partial to lentils), so all of this is rather counter-intuitive for me.
I have a bit of trouble finding drinks that I like. I don't like non-cola soft drinks (just as well), and now I really don't care for sugary drinks. I like an iced tea that I order from Hawaii, so I guess a low-phosphorus, low sugar drink is worth the extra expense. I've started buying carbonated water, and I flavour it with fresh lime or lemon juice.
I am careful about what I eat, but there is no way I could EVER visit my family down on the Gulf Coast without having just one meal of black-eyed peas or oysters. Occasionally, I would kill for a big bowl of lentil soup.
The one thing I simply cannot have is grapefruit as it interferes with my cyclosporine. But I love berries, so I can still get my fruit fix.
The worst thing about the diet is merely having to think about it, you know? I do cheat a bit (I've never had a problem with phosphorus or potassium...yet), but I am pretty careful all in all.
I wouldn't mind a glass of milk right about now, actually.
I live in the Chicago area where every food is either stuffed/smothered with cheese, is served on a bun or is phallus shaped (those processed meats are digusting. You can probably tell that I am not originally from here...) This is not a good place for people with kidney problems! LOL!

I'm the same way MooseMom. My favorite things to eat are whole wheat bread with peanut butter, whole grain cereals, organic yogurt, milk and fruit. I almost wanna cry every time I pass the yogurt aisle.

Speaking of yogurt, I have some French Vanilla yogurt in the fridge. I don't know what came over me...I just saw it in the dairy aisle and had to have it. The good news is that I haven't eaten it yet. I'll probably have a few spoonfuls over some strawberries and throw the rest away.
I used to really like Greek yogurt; it was easy to find in the UK. It's not so easy to find here in the US, but I found some and bought it for my husband. He had never even heard of it. He loves it. And he eats it in front of me.

i'll probably get "hate" mail ;) but i haven't really given up anything. as long as my numbers are in line and i take my binders i eat pretty much what i want, just not a lot of it. i watch what i eat and don't go overboard on anything

Gee, I see all these items that i eat or drink on a regular basis. I have been on dialysis for almost 7 years. I have coke regularly. I eat macaroni and cheese (homemade) every so often. I eat pasta e fagioli (with minimal beans) my #'s are all good consistently. I think I crave artichokes or avacado's, not that I totally love either ,but I kow they are super high in Potassium. I also have a problem with weight gains usually, especially on weekends (like 5 kgs) I guess I would also crave drinking gallons of iced tea or Mountain Dew.

Yogurt is very high in K and PO4.
There is nothing wrong with having a little bit of yoghurt, it is on the menu at the hospital here every day just about. I think the tubs are 100gms. No need to throw it out, just have a few dollops a day on its own or on some fruit or cereal.

I have a little yogurt once in a while. I make up this killer sauce for fruit salad, with some plain or vanilla yogurt, about half as much mayonnaise, a bit of lemon juice, a bit of honey, vanilla extract, a pinch of salt and black pepper. Yes, black pepper. Whisk that together and fold it into any combo of dialysis friendly fruits. Good stuff. trust me.

Thank god I never had a thing for chocolate. I dont crave and never have... I like chocolate milk and chocolate syrup that you put on ice cream, but as for just plain chocolate bars, no.... bleh.

Now wait a minute, that chocolate has to be digested and then it goes into the bloodstream. It takes a couple of hours for all of that to happen, so eating chocolate while on dialysis is like prepoisoning yourself.

All the dialysis nurses and doctors have said to eat something you crave like chocolate or chips at the start of dialysis. They said it will be dialyzed out by the end of the session.

I think Kitkatz is right, unless you do nocturnal dialysis. An orange drink, maybe in 3 or 4 hours. But something solid needs more time to digest in the stomach and travel down the small intestines.
Some things are absorbed fast, like salt from soup or sugar from orange juice. It also depends on have fast or slow your stomach empties. Probably best to try your treats an hour or two before treatment. But you could be taking a bit of a risk if you weren't keeping track of what you ate since the last dialysis treatment.

I eat a chocolate on a regular basis as I start dialysis, I run off a 1k tank and my pre and post K numbers are good. You do need to know your numbers and be aware of what you are eating. I do not recommend this across the board for everyone.

I don't know if it's because I've been using Extaneal, which doesn't have the dextrose in it and maybe my body is so used to having all the sweetness in my blood and saliva that I notice when it's not there? (By the way, the extraneal doesn't seem to work for me - in fact I think I may have an allergy to it as I wheeze by the time bed rolls around).
Anyway, I've been buying marshmallow peanuts, jujubes, sponge toffee, and licorice. Not bad, except it's all just crap!!

I had some the other day - with multigrain nacho chips, and all homemade toppings - keep the cheese to a minimum. You can make some that are more pepper/onion instead of all cheesy - they still taste good without being tooooooo bad for you.

Actually, this has been my worst problem, giving up everything! So, I haven't. I just don't eat or drink as much of it as I use to.Maybe every once in a while I will have a V- 8 ,which I dearly love!!Ora few nut's or a little milk.I just limit myself a liitle on other thing's so I can have a few of these special treat's.Not easy, nope, but I do not feel guilty.It helps me when I have to stick to the dialysis diet other day's.

i use coffeemate on my cereal, the french vanilla flavor. it's pretty good. i don't really care for the regular or non flavored variety, but if that's all there is it's not to bad. and yes, it needs to be refrigerated, so it's nice and cold. (you want the liquid from the dairy case, not the powder from the coffee aisle)

I am one for moderation as well. My dietitian told me that on the morning before dialysis, I can have some things I don't normally have, like orange juice.
My last labs were not so good with phosporus and calcium (too high, too low), so I have been very compliant this month and used lots of Tums. I will find out tomorrow (monday) how my blood works are.

I crave different things every day. Last week it was pinto's and cheese from Taco Bell. Today it's pizza from my favorite Italian restaurant. My doctor never put me on any official diet restrictions because I'm good at watching my diet. Another thing I crave is cheese! I love cheese and as long as I take my binders with it, I can have it. I drink Pepsi but my doctor told me to take binders with it to keep my body from absorbing it. He did say that for some reason the body absorbs the phosphoric acid in soda pops faster than the phosphorus in food. I take Calcium Carbonate pills for binders.
Another thing I've craved...Slurpees from 7-11!

I crave Lemonade, lemonade and more lemonade, i cant seem to get enough of the stuff, i started making my own with lemon juice and splenda but i started getting bad stomach pains (i think it was the large amounts of Splenda) i have stopped drinking the lemonade and the splenda and the pains have gone away, i know drink the WalMart brand of Crystal Light Lemonade (there is no phosphorus in that) at least it doesnt say there is :P ;)

Since I got my transplant and have not had the PD fluid in me all day, I'm finding this to be the case, as well. Lots of people are bringing us dinners, and most bring dessert with it, so we've had cookies, brownies, pies, and other sweets around. Apparently the PD fluid had more calories than I thought, though, because I'm still managing to lose a little weight!

Definitely GOOD Pizza, not Domino's or Pizza Hut, I mean Chicago or New York Style. I grew up in a small town outside of Pittsburgh, Pa, plenty of Italians and plenty of greeaatt Pizza. Also good Mexican food.

I just will not give up melons - watermelon is so good and I can get it year round now -- I eat less but I can not give it up -

Unfortunately Twirl, I cannot eat things that I dearly love in moderation, especially any type of melon. It is easier for me to just not eat it at all...kind of "out of sight, out of mind." I must admit that I over endulged in tomatoes this year. I didn't know about the tomatoes being bad, until half the summer was over...oops! Luckily, my labs showed no ill effects from it, but I am much more cautious now.

What I really crave is my old appetite back and ability to eat hot and spicy stuff, even though eating once a day does save money.

I buy the Trader Joe's brand of rice milk, unflavored. It's very similar to Rice Dream. I find that it tastes a lot more like real milk than soy milk. Not to mention, soy milk isn't exactly phosphorus-free either, while rice milk is pretty good in that respect.

Trader Joe's is a gourmet/health market. It looks like there's only one in Tennessee, in Nashville. They sell a lot of things under their own private label. I think their rice milk is organic, too, and cheaper than Rice Dream in other supermarkets around here (Southern California).

We have a Trader Joes the next town/city over. I like the blueberry juice they have and the cherry juice too. I will not drink soy ever again, once was enough! It was nasty and not gonna waste good money to try rice milk that may have the same outcome. They should have trial sizes for that stuff! :puke;

Well since my last post about asking had anyone tried Rice Dream milk, I have since tried it and I LIKED it! I even liked it so well, I could even drink it just from a glass rather than "drowning" it in some cereal to be able to drink it, ya know? I just hate that a freaking carton costs almost the same as a whole gallon of regular milk, that part sux and that is why I can only buy that stuff every now and then.
Anyways, lately my craving has been apple juice...........I don't know why but I just can't seem to get enough of it. I can't think of any other cravings right now............

Annabella Chocolates has something similar here. The candy company was more famous in the 50's and 60's and now is a specialty candy company. They have a mint flavored one that isn't bad. When you come to Chicago I bring some if you haven't tried it.

Since my transplant I crave beans of all kinds. Split pea soup (spicy with Indian flavours) for example and tonight I made a huge pot of stewed black eyed peas with veggies and smoked turkey (way less fat than ham) and homemade low-fat corn bread.
I'm also plotting some spicy black bean soup with double smoked bacon as a flavour seasoning. Hmm, think I should make some Indian daal next week too...brown basmati rice with that. Prednisone does it's evil appetite magic so gotta keep it healthy.
Rookiegirl...these days I'm loving low-fat peach yogurt, mixed in with a Motts Fruitsations, unsweetened peach, mango applesauce. You can put it in the freezer for an hour or so to get it semi-frozen and I find it super tasty.

Oh hell , like the most of you I love Milk, cheese and all those bad things in life that conflict with Dialysis and those all important numbers we have to make every month.
Like the final days of a druggie the very last time they say,until another day! Being a cop for almost 40 years I've heard it all.
One day I found myself in the position of an addiction, Milk ,Cheese cold drinks etc. Face these demons like drugs, find a way to eliminate them from your diet . Most addicts fail several times before kicking the bad habits.
You will find your self eating less and less of the bad stuff if you look at cooking as a sport a competition with life its fun. don't use any salt in your diet ,I know its hard. I use Citric acid now and even a little less than regular salt while cooking only never at the table. I use Kroger brand southwest Chipotle season also. Good luck with this a positive mental attitude is needed, be the master of the addiction

Well I cook salmon and talapia in the microwave. That's what the direction on the package says too. Place frozen in covered microwave safe dish and cook 3 minutes. Then you eat out of the same dish and have only one thing to wash.

Well the best would be to have the one with the lowest sodium. Hate bacon that is to salty tasting that it ruins the flavor for me.
Dan I can cook onion rings, but I start off with using beer in the batter. Not cheap Old Style or Pabst Blue Ribbone Beer either.
If I make pizza dough, make sure the floor is clean if you want me to toss and twirl it in the air.

I've heard of beer batter onion rings. sound mighty good. I agree about salt. After watching it for a while the least little bit taste salty. Same thing with sugar...I had half a snickers bar this afternoon and it was so sweet i couldn't get it all down.

Went out o eat at Chili's for lunch with a friend and we both forgot to order the bacon. I'm with Wenchie, I have been to buffet's and haven't had a problem. Yes my transplant center warns us about going there, but I think that is more for when you first gotten your transplant.

No, it's at a bakery store in Chicago that has a location inside the transplant hospital called au bon cafe. Think it's a local chain of stores though, but made with real corn. It is really good even though it's about $2.00 for a mini loaf.

Now my husband wants to try these bacon/cheddar things you mentioned from the Au Bon Pain. I'm a veg, so I'll pass.

They have a brocolli and cheese one too at times, a Southwest Corn Bread, and regular corn bread. but I have found that after 1:30 pm, they are picked over. A lot of people rave about their sweet cheese crossants and danish. They have a key lime cookie that is hard to get along with a chocolate macadamia orange cookie.. If you like pound cakes, the double mint is filling with a few bites compared to the lemon pound cake that is good also. The coffee is also better and pretty much the same price as it is over in the cafeteria.
I'll get my bacon fix when I go there the 22.

Use lean pork loin, a dab of liquid smoke and a crock pot...cook it low for a long time......like overnight. Pull it apart (dont cut it) add BBQ sauce...reheat in crock pot...put it on rolls. GREAT for replacing smoked pork BBQ...I cook both. Well, I used to.

Chris: a spring roll is basically an egg roll, made with a thinner wrapper. They can be eaten fresh or fried.
dwcrawford: I'd recommend a different route. Good pulled pork needs to be done with a pork shoulder roast. It's all the connective tissue and intermuscular fat that makes it so good. If you don't have a smoker, you can do it in the oven. Douse the roast in liquid smoke, maybe cut with some vinegar, then rub it with a mixture of spices like garlic powder, paprika, onion powder, black pepper, oregano, thyme, cumin, and whatever else sounds good, along with whatever amount of salt seems right for you (it's a big roast, so it's hard to oversalt). Stick it in a roasting pan and put it in the oven at 250 degrees for 12 hours or until the bone comes out very easily; or check the temperature with a meat thermometer - you're looking for 190 or higher.
Then pull it out of the oven, wrap in foil, and let it rest for an hour or as long as you can stand; then start pulling with your hands or two forks. Serve on a soft bun with some Carolina-style vinegar-based BBQ sauce.

Watching travel Channel again and they are showing sandwich shops across the country again. I gotta go to Tony's Restaurant in Birch Run, MI for their BLT. Everything they have is pretty much HUGE!

Tony's Birch Run Mi is 20 min from me! BLT's have 1 lb. of bacon! every serving is huge and you can take a friend and pay $1.00 for an extra plate. Order a banana split and you better take 4 friends! It's not gourmet or fancy and chances are you'll have to stand in line. If you can still move after you eat you can go shopping at the Outlet Mall across the street

They do not use regular bread. It is all fresh baked and sliced very thick. with enough meat for 5 sandwiches! Chili cheese fries are a lb of fries covered in chili and cheese.

It is. Most low-sodium soups (especially the ones with "natural sea salt") have potassium chloride replacing some of the regular salt. Same with low-sodium deli meats, tomato juice, and some other things. Low sodium soy sauce and certain brands of low-sodium crackers (like Goldfish) don't have added potassium, instead using lactic acid, which is safe for us.
There are always exceptions, and there are no real hard and fast rules, so you'll have to check labels. Since not everything lists the amount of potassium, you'll have to check ingredient lists for "potassium chloride."

I haven't been craving much in the way of food, except a couple passing cravings for chocolate.
But I have really been craving fluids. Drinks of any kind. Fortunately I haven't had to limit myself recently - on a hot day when I drink a lot, my legs will feel larger at night, but I don't have any detectable edema, and my cycler takes off more overnight when I have more fluid on me.
So today I had a venti iced coffee from Starbucks, a bottle of water, a glass of iced tea, and a lemonade from In-N-Out. And I'm not done yet. :yahoo;

Rainier Cherries are a different color and taste sweeter. They are a lighter shade of red followed by a light yellow color sort of like a golden delicious apple to varying degrees. The cherries come from Washington state and are generally a little more expensive and rarely go on sale.

I can only get the banana flavor in those small 5 cent pieces, not the larger bar size ones. In the old days when I was a kid in the 70's, I could easily get it, also in chocolate, vanilla, or strawberry. Now days they have weird funky flavors.

dude, i honestly still eat bad and don't follow the diet but I do it in moderation and maybe once or twice I will give it the good overload. but the one thing i miss is ice cold gatorade. I use to drink this stuff all day everday. Now I cant do nothing but look at it as I walk by the cooler. I wish I could have a grape or fruit punch right now!!

Oohh... Coke with lots of crushed ice. I haven't had that since ninth grade. My high school actually had a vending machine that dispensed soda in a cup with ice - and I'd pay a dollar for about 16 ounces of Coke and crushed ice rather than a dollar for a 20 oz bottle of Coke.

That sounds like discrimination to me. Also B.S. Here you have someone willing to raise an unwanted child and they deny you for that and there are far worse people who have adopted children. Yeah, lets let as many kids be raised by the state as possible.

Chris, I will have to send you some Nutella. I just got a small jar from a German store in Dallas that we went to last weekend. They have it at a few supermarkets here, but not all of them. It is great on toast in the mornings.. maybe not so healthy of a breakfast.. but worth it every once in a while.

Yeah, i eat the soft candy bananas at times (that's a treat). I avoid chips all together though, as my potassium is always on the high side. I don't think i clear it with the PD real good. I love tomatoes, but don't buy them. For the same reason.

Luckily my potassium is almost always in the 4.6-5.0 range which is not so bad so I can afford the odd indulgence. The worst thing is worrying about if you've had too much of this or that, and at least with phosphates you can have another binder, but for K there's next to nothing so you have to be extra careful.

Continuing my experimentation with hot dried chiles (this kind (http://www.thespicehouse.com/spices/chile-de-arbol-peppers)), just now I made some popcorn with torn-up chiles. I fried the dried chiles in a bit of oil just before putting the popcorn in the pan, then put a splatter screen over it and let it all pop. The flavor isn't quite there yet, but the popcorn was uniformly spicy. I'll keep experimenting with this. Eventually I want to get it just right so I can eat the crunchy fried chile pieces along with the popcorn.

I'm still on my spicy food kick, so today I made chili-lime peanuts. I'm still experimenting a lot, so I don't know the best way to do it, but here's how I did it today: boil some raw Spanish peanuts (out of their shells) in salted water for 5 minutes. Drain and dry them, then cook some smashed garlic cloves on low heat in a pan with some olive oil, until the garlic has given up its flavor to the oil. Take the garlic out, turn the heat up to medium-low, then put in some torn up dried chiles, and stir them around until the oil starts to pick up the chile flavor or the chile pieces start to darken.
Add the peanuts and stir them pretty constantly while they cook. They should be done in 10-15 minutes. About 3 minutes before they're done, squeeze some lime juice in the pan (about half a lime for a large handful of peanuts) and stir them until they're coated and the lime juice has fully evaporated. Then grind on some black pepper and sprinkle on some salt to your liking.
Once they're done, drain the peanuts in a strainer or on paper towels. Before they cool too much, taste one and see how spicy they are. Add cayenne pepper powder to your liking, along with paprika to make them look good.
Just a warning: open a window or turn on the vent fan in the kitchen. The last few minutes of cooking, with the chiles in there, tend to throw off a lot of pepper gas. Don't add the cayenne before you take the peanuts out of the pan, like I did, or you'll be coughing and running for tissues. At least my sinuses are clear now. :urcrazy;
Feel free to eat the fried chile pieces, too. If you can stand the heat (depending on the type of chile you use), they taste really good.

I have been craving Caprese sandwiches - it's practically all I've been eating for weeks. My husband makes ciabatta fresh every other day or so. We use the bread maker to make the dough, and then bake it in the oven. Then I slice it lengthwise and pile on the basil, buffalo mozzarella, and tomato. A little mayo or olive oil, and of course balsamic, to top it off.
I'm having it again for lunch. Why couldn't I have had this craving over summer, when we were overrun with basil?

Oh, this post is giving me flashbacks! I hope I never have to do the no food or water thing ever again. It was starting to feel like some sort of kharmic punishment for all the cheating I ever did on the dialysis diet!
Right now, I just keep craving blueberries. Strawberries, grapes, cherries - they all go squishy in my fridge, but I'm eating a minimum of 5 pints of blueberries a week. Transplant meds do some weird things to your tastebuds!

On dialysis days I try to eat breakfast before dialysis, but nothing too substantial or my blood pressure drops. Sometimes I eat something that lasts me until lunch after dialysis, sometimes I only manage to have some cereal. After dialysis, I pick up lunch somewhere.
On non-dialysis days I tend to only have coffee in the morning, and I manage to cook something for lunch, or pick something up if I can't handle cooking.
Typically for dinner I don't have the energy or motivation to cook, so I end up with dumb snacks.
I often have the energy to cook. I don't have the energy to clean. And the way the kitchen is abused by my family, I'd have to clean before and after cooking.

I crave chocolate......but i don't enjoy it any i just buy it cos i can't have it and also I love crisps!! Just can't go without walkers (lays) pickled onion flavour! I don't really enjoy coke anymore I'm so used just asking for it in restaurants and just picking it up in the shop but recently have got addicted to those monster energy drinks!! But still love diet cherry coke!! No wonder my phosphate is still high! *sighs* renal failure is so hard!!!
