Dinner tonight was my latest addiction - cream of potato and cauliflower soup.  I've been cutting all my potato dishes with half mashed cauliflower.  Healthy and yummy!

Tonight I'm having baked chicken breast, salad, and steamed broccoli and carrots.

I could eat this every night of the week if my parents wouldn't make me eat what they cook.

New upper-arm fistula April 2008
Uldall-Cook catheter inserted May 2008
Haemo-dialysis, self care unit June 2008
(2 1/2 hours X 5 weekly)
Self-cannulated, 15 gauge blunts, buttonholes.
Living donor transplant (sister-in law Kathy) Feb. 2009
First failed kidney transplant removed Apr.  2009
Second trx doing great so far...all lab values in normal ranges

I lie about spam... haven't eaten is in years.  I recall two things worse than spam as a kid (potted meat and vienna sausages).

But what am I having?  I'm craving tabouli (though I may not be able to spell it I'm still going to try and make it again.)  Or maybe I'll  go get it at a restaurant?  (but I  need something to do with this bulgar wheat I bought.)  No, think I'll make it.

I cook alot on weekends and make several different things and feast on them through the week..... often get tired of the same thing but what are you gonna do!!!

I use to do this when I was single. It makes things easier.

I roasted the cauliflower and the carrots for last night's soup and it was very nice.
Tonight I'm making a quinoa dish with black beans, green onions, garlic, veggie stock, few dried blueberries and fresh pomegranate seeds and cilantro as a garnish.  That will be served alongside some grilled salmon topped with a spoonful of spicy salsa.
The New York Times Health section has a terrific series called Recipes for Health by Martha Rose Shulman and I think several could be adapted for the renal diet by substituting some ingredients.
