On Friday, I decided a nice hearty Bolognese-style meat sauce sounded good, so I went out and got the ground beef that I was lacking. Just before I started cooking, I got a call from my mother - she wanted me to cook the corned beef that was in the fridge. So I changed my plans and made a usual simmered corned beef.

I let the corned beef sit in a pot of cold water for half an hour to leach some of the salt, then changed the water and brought that up to a boil, and poured that out to leach more salt. Then I added a beer and enough water to cover, and seasoned that with a few things (don't quite remember).

After it had simmered for 2 hours, I added some red potatoes. 15 minutes before it was done, I added one head of cabbage, quartered, on top of the corned beef - pretty much sitting up out of the liquid so it could steam.


Today I got back around to making my pasta sauce. Three strips of bacon, chopped, in a heavy pot with olive oil. One onion (had to use red, my white onion was dripping :( ), three stalks of celery, and a handful of baby carrots, all finely chopped and added to the pot. Once all those were cooked down and browned, I added two pounds of ground beef and got that broken up, cooked, and well-browned.

Then I added the remains of a leftover can of tomato paste and some paprika, and fried that in an open spot in the pot until it caramelized a bit. Then vermouth (no wine on hand), chicken broth, Trader Joe's Italian Tomato Starter Sauce (diced tomatoes and tomato sauce, already cooked and seasoned with onion, garlic, olive oil, etc.), and some red wine vinegar; then some oregano, thyme, and black pepper, and a very small amount of Chinese five spice (a secret that goes very well with the tomatoes). Then some salt and sugar to balance the flavor, and then it simmered uncovered for an hours and a half. I checked it every 15 minutes to stir and add more water if needed. The idea was to add water, cook it down, add water, cook it down, over and over.

At the last minute I added some balsamic vinegar, and then served it with penne rigate.

Yes, a long post, but I haven't posted in a few days and I've been busy :waving;

I'm trying to think of the next thing to cook. What I really want is something like chili, that I can eat in a bowl, or have a smaller amount to dip tortilla chips into. I'm thinking pork chili, but I've always found that chili is best for dipping chips with lots of beans. Not an option for me right now...

Anyone have any ideas for something bean-like that I can put in chili that won't destroy my bones? Or something other than chili that's good to dip some sort of chip into?

Chicken with lemon pepper seasoning, a large salad, garlic bread. And then there was dessert. Made a batch of sugar free, fat free chocolate pudding, poured it into very small containers, then added about 2 T of cherry pie filling on the top. OMG, tastes just like chocolate covered cherries.

Had some slow-roasted cherry tomatoes and roasted garlic with oil, balsamic, and herbs, on toast.

I'm having a hard time getting enough protein. I need to find something for late dinner to help with that.

Today I had money to go food shopping, so tonight's dinner was carne asada tacos with chopped white onion, dried Mexican oregano (forgot to buy cilantro!), and El Yucateco red habanero hot sauce. The carne asada was frozen, all ready to go, from Trader Joe's. Just heat in a pan and throw in a corn tortilla. It's okay, but not the best. Is my taste changing? Beef more often tastes "off" to me, old.

Maybe I bought the wrong brand of corn tortillas. Of the ten that I wrapped in aluminum foil and put in the oven, only 2 were viable for tacos. The rest had terrible holes and rips.

And the El Yucateco hot sauce... well, let's just say it's HOT! The objective Scoville rating isn't that much higher than Tabasco, but it's easier to get more onto the food, and the unique heat profile of the habaneros seems to make it that much hotter. For some reason, habaneros hurt more, and burn longer, but they also trigger the endorphins that much more. I'm riding on a chile-high right now.  :2thumbsup;

What - did everyone stop eating!!!!

I made burgers on the grill last night the weather was so nice for this time of year, will probably be one of the last nice days of the year, macaroni salad and sliced tomatoes with cottage cheese. Very easy and very good. :beer1;

Yesterday we went to a friend's 60th birthday party. They had a couple there who were cooking Mexican soft tacos. There was nicely seasoned chicken, beef and pork on a open grill. The best part was the tortillas! They rolled the dough out and cooked it right there on a griddle. Also had fresh guacamole and salsa. I loved it. Wish I had more now!

Can not believe this one. Made garlic bread in my breadmaker, it flopped, baked potato ( hard to believe, but it flopped too ) . But, made an apple coleslaw, very good, and marinated chuck steaks.

We're having Chipotle tonight. Not my first choice by any stretch, but it's a little something different for the kids. Apparently, they are holding a promotion in town for their new kids menu - order any adult entree, get a free kids meal. I have to give them credit for at least representing vegetarians on their menu.

I made a big pot of spagetti sause, I can now make my home made stuffed shells for christmas eve, have to make alot of sause ahead of time, I will also make a pan of eggplant parm and a pot of hot sausages. yummy :beer1;

Yesterday I made a pot roast in my crock pot.  I soaked the potatoes for 24 hours before adding them to the pot. It came out awesome!
