For dinner tonight we are having:

homemade turkey soup (from leftovers), including unsalted greenbeans and carrots.
touch of salt "saltines" and colbyjack cheese with white grape juice.

Split pea soup with smoked turkey and mixed brown rices added at the end and spanakopita (greek spinach and feta phyllo pastry bundles) on the side.  Fresh blueberries for dessert.

mmmm, I wish I had what Kamal had, I love indian food!
But tonight I had a rare treat - spaghetti with a meatball, a sausage and a little red sauce.  My Mom's homemade, so yummy.

Tonight it's T bone steak, homemade french fries f0r hubby and a sidekicks potato dish for me. Since hubby has been on nocturnal home hemo he has not had to watch his diet.  He's even drinking a nice cold beer now!!!

Went grocery shopping today  for the first time since the transplant and getting cleared for a full, non-liquid diet.  Holy cow, I went a little crazy!  Potatoes, tomatoes, bananas, refried bean burritos, orange juice, 5 kinds of cheese, milk, yogurt. . .where to start for dinner?!  Bean burrito and nachos with lots of cheese and a big glass of milk, I think! 

Now, if I can just get thru the first couple of weeks of being able to eat anything I want without gaining back the 65 pounds I lost over the last 3 years. . ..

Cod fish fillets breaded in flour with spices (black pepper, red pepper, hot and spicy Mrs. Dash, and a dash of chili powder- but NO salt!) and deep-fried in olive oil (I'm trying to gain weight... as my kidneys slip farther and farther into failure, I'm finding myself eating less and less and sometimes hardly anything even though I try- so my mom fries fish and chicken in heart-healthy olive oil!)

Almost ashamed to admit this, but, due to a rushed day and an even more rushed night, plus a husband with a very bad head cold, I had 2 small frozen burritos. They were very nasty and gave me heartburn in addition to making me feel guilty. A wasted meal. I will do better tomorrow, I am sure.

I had chips last night (french fries) with malt vinegar. I have been feeling really ill, and it was that or nothing. My husband makes them by hand, in a cast iron pan (it helps up my iron intake), with organic yukon gold potatoes.

I can still remember being deathly ill as a child, and potato was one of the last foods I was able to tolerate before I stopped eating altogether.

This is not a dinner story, but dessert. We have had a total dessert catastrophe. About six months ago I became obsessed with a product at our local co-op - pistachio cream from Italy. It was pricey, but I researched the product and it won some awards, so I decided it was worth a try. We have a little ice cream maker, so I thought we would use it to make ice cream (well, technically they call it 'frozen custard' around here). We tasted the pistachio cream way back when I first bought it, and it is just beyond decadent.

Last night, Gwyn and I had intended to make a fruit ice cream for the kids, but that was put on hold when it got too late. So Gwyn decided to flavor the standard vanilla custard he had already made with the pistachio cream instead, and therein lies the problem. The pistachio cream is already sweetened, and is exceptionally rich, so we had planned to modify the vanilla custard, but since this was a last minute switch, Gwyn couldn't. He thought it would still work. We now have a container in the freezer that tastes exactly like someone has taken unsalted butter, sweetened it, and injected it with the purest form of pistachio essence known to man. My kids won't touch it because it is green, and I cannot tolerate how rich it is. We still have half a jar of the pistachio cream left, in addition to about a pint of the ice cream. Gwyn has assigned himself the task of finishing the ice cream by Thursday, to make room for his monthly meat shipment.  :o I hope he survives this insane exercise.

Classic 7 layer dip and lime tortilla chips.  Bad, bad, bad girl!  Ahh, well, it's the last of the fattening food in the house.  I did the grocery shopping today, and nothing that wasn't whole wheat, pure fruit or solid veggie went in the cart.  The indulging in everything I wasn't allowed pre-transplant is over.  I gained a couple of pounds over the last 3 weeks of finally being allowed solid food again, and the last thing I want is to gain back what I lost!

Message for any ladies over 50 who can cook... has anyone ever heard of "tea cakes".  Very simply quick cookies with nothing on them.  Not pretty just real good.  Maybe has Vanilla in it?  I just want some (memory stuff happens when you get old).  Recipe if you've heard of  it please.
