Admin for IHateDialysis 2008 - 2014, retired.
Jenna is our daughter, bad bladder damaged her kidneys.
Was on in-center hemodialysis 2003-2007.
7 yr transplant lost due to rejection.

Fruit salad - grapes, kiwi, strawberries, blueberries, and blackberries.  I made it when I got home from shopping, thinking I would have it for dessert, but it looked so good, I skipped dinner and had a big bowl of fruit instead.

Living donor transplant (sister-in law Kathy) Feb. 2009
First failed kidney transplant removed Apr.  2009
Second trx doing great so far...all lab values in normal ranges

Home made from scratch  :thumbup; Chinese wonton soup, beef and pineapple ginger stir fry served in the hollowed out  pineapple, spring rolls/w/oyster flavored sauce, shrimp fried rice. chicken, broccoli stir fry. with jasmine tea..... I'm on a Asian cooking kick or have wok will fry  :)  :clap;.... Melinoir

OMG    how do you make homemade won ton soup -- do you put roast pork in it
          can you make hot and soup and what about crab puffs -- do you use cream cheese or real crab meat

this is by Twirl-monrien   ( a healthier version for me ) :cheer:

small salad with very little dressing----- like hardly any - just enough to barely see it
baked tiliapia fillets -- my husband's will be fried --- mine baked with some lemon juice and pepper
French fries for my husband --- cooking is the only thing I will do to these fries --- none for me
broc and cheese for my husband ---- plain steam broc for me
krispie critters dipped in choc for my husband and a krispie with fresh strawberries for me
(krispie treats made with less margarine-- they are a little harder to get to stick together but it did work)
can you tell my husband is not a fruit and veg eater?

thanks twirl. but there are days i'd much rather have what you're having. especially if you do the cooking! when is dinner? i could be there in about 10 hours. after all texas is just down stream!   :rofl;

Cooking night again tonight - make ahead meals I have planned - chili, taco meat for taco salad and tacos, chicken noodle soup, creamy chicken casserole, and a few extra grilled breasts for chicken sandwiches.  I might dice it all, and just do chicken salad sandwiches, since I have pita pockets.  Haven't decided on desserts yet - I'm thinking of using some leftover wild plum jam to make a batch of sweet bread - kind of like banana bread, only with less potassium.

We went to our usual Japanese restaurant (run by a Korean family) with Kathy.  I had a dragon roll (shrimp tempura, bits of avocado and fish roe) and a spicy crab roll.  Then as a special pre-transplant surprise treat the owner ,Sook Shim, who is always giving me stuff on the house, sent over an entire red snapper that had been deep fried first, then set on a bed of sweet and sour veggies and fruit.  It was beautiful to look at, equally delicious to eat and really heart-warming for all of us.

That sounds so good! I had a small peice of Red Snapper last weekend- what a great fish!!

to  make homemade wonton soup I have to admit I use store bought wonton wrappers but I fill them with ground pork or sometimes shrimp and a mixture of seasonings (five spice powder) some finely chopped water chestnuts, green onions, wrap them freeze them on a cookie sheet and use bullion or chicken stock to make the shoup base depneds on what I have,  par boil the wontons 3 minutes before freezing then after they are frozen put them in ziplock to add to soup with what ever leafy veggie you like (spinich, green onion, bean sprouts, bok choy, etc. in broth and add frozen wontons boil softly 10 min and enjoy works great and easy to make.... Chicken fried chicken, macaroni salad, pinto beans, and fried okra. Oh and soft rolls. I did not cook. We went out to Kelley's Restaurant. Yum!

I use to watch wok with yan on pbs loved his dishes so I bought a bunch of woks and began a love affair with asian food mostly Chinese if anyone wants recipes ask and send me an eamil address I will send the recipes to you and yes they are very easy to make....... as Yan was heard to say ..... Chinese cooking is like sex actual cooking time very short   :bandance;....... Melinoir

A salad of watercress and frisee lettuce with two toasted walnut halves, a smidgeon of Stilton cheese, half a caramelized pear and a dijon vinaigrette to start.  Next, roulade of duck breast served rare on a creamy mixture of diced potato, greens and wild mushrooms.  Dessert was cinnamon panna cotta sitting on a bed of fine shredded wheat (there's a name for that stuff but I forget what it is) with a compote of winter fruits and a drizzle of caramel sauce.  I skipped coffee but started the meal with three Renagels.
