Hmm, hard to describe a flavor ... They're tart, kind of pickle-y, lemony, tangy. Not a real strong flavor, but one that complements the lemon in the dish.

I haven't been able to eat much lately, but last night I ate a little ham, stuffing, cranberry sauce, and creamed corn. I couldn't even finish the little bit I had on my plate. :(

I will be having homemade Chicken Cordon Blue tonight. Hope I spelled that right.

cordon bleu
[kor-dohn-BLUH] 1. A French term (literally translated as "blue ribbon") that referred originally to an award given to women chefs for culinary excellence. The term now can apply to any superior cook. 2. The term also refers to a dish-chicken (or veal) cordon bleu-in which a thin scallop of veal or chicken is topped with a thin slice each of prosciutto or other ham and Gruyère or other Swiss cheese, then another meat scallop. The stacked meats and cheese are then breaded and sautéed until golden.

unless what you are having is blue  ;)

Chicken salad with apples, celery, pecans and a little lite Miracle Whip, and a tossed salad. Trying to keep under 2000 calories a day to drop some of this prednisone weight >:(
The 15 lbs I lost right after my transplant must have been fluid and muscle mass...and the 20 lbs that have come back is all fat...mostly in my abdomen and back  :P
The joy of eating whatever I wanted without restrictions sure was nice the last 3 months, but it's time to wear something other than sweat pants! Don't get me wrong...the weight beats the heck out of dialysis!

I put some frozen chicken in olive oil and pan fried it up, then dropped a can of Hunt's Chunky Vegetable spaghetti sauce over it and let it stew. Some rigatoni noodles with butter and pamesan cheese and we were set to eat.  I even made garlic bread croissants iwth pillsbury croissant dough. It was good.
