We're using the last of my husband's pasta sauce that he makes any time we have too much veg and not enough time to think of different things to do with it all. He takes any tomatoes we have and throws them in a saucepan with some olive oil, basil, and veg - this time I think it was carrots, different colored bell peppers, green beans, onion, and assorted squash - purees it and done. I love the sauce. Usually I am a salt fanatic, but this has no added salt, just what comes from a few sliced olives and some parm that we add after the fact. We use it on tagliatelle, and even the kids eat it with enough added cheese. Oh, don't suppose anyone has any ideas for fennel (the fresh stuff)? We received a load of it in our CSA box yesterday, and are pretty well stumped as to what to do with it.
I like to slice it with a mandoline.
