Treatment: Tue-Thur-Sat   5.5 hours, 2x/wk, 6 hours, 1x/wk
Dialysate flow (Qd)=600;  Blood pump speed(Qb)=315
Fresenius Optiflux-180 filter--without reuse
Fresenius 2008T dialysis machine
My KDOQI Nutrition (+/ -):  2,450 Calories, 84 grams Protein/day.

Kitchen night, tonight.  Time to cook meals ahead.  Working on burger that will be made into taco/nacho meat and a pot of chili.  The pot full of potatoes will become potato salad and potato soup with ham and cheese.  While I've got the cheese grated and the ham chopped, I'm going to put in a batch of ham-filled biscuits.  Now I just have to decide on desserts.  I've got to take a plateful of sweets to a party in 2 weeks, so I've been making cookies ahead and freezing them as well.  I might make up some caramels for a practice batch as well.  I'm doing a craft show in 2 weeks, and I was thinking about making some fudge and caramels to sell.

Anybody hungry?  I'm cooking enough for everyone!

03/2007 Fantastic Eye Surgeon in ND got my sight back and implanted lenses in both eyes, great distance & low reading.
Gortex 4/07.  Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.

Thats my kind of meal! Or at least lately that is. Weather is Rainny so I just get lazy and dont cook.  :oops;

Vietnamese spring rolls on top of thin vermicelli noodles mixed with fresh bean sprouts, and lots of fresh that basil, mint and cilantro.  Side order of cold fresh shrimp rolls with a hoisin dipping sauce.

Homemade burgers of antibiotic-free, organic lean beef on Kaiser rolls.  Fresh onion and tomato salsa.  Side salad of belgian endives and Mache with homemade tarragon vinaigrette.  I'll also eat a half a red bell pepper cut in strips.  Fresh sliced mango and raspberries for dessert.  Then I'll be stuffed to bursting.

Twirl, it requires a German seasoning packet. I will look in my cupboard to see if I have another. If I do, I'll send it. Only problem is it is high in sodium.

Tonight: chicken burritos! yum

krispie critters   --- not sure why
my husbands loves them
I tried to trick him once and told him store bought ones were homemade
he knew I was not being honest

Ever make them with cocoa rice krispies and a touch of almond flavouring?   (I use only very little butter and a third less marshmallows but put cling wrap in the pan so they won't stick to everything.)

just use cocoa krispies
also
I make them and dip them in choc or white choc
but I have to owe my husband a big favor for making them "gourmet"

I use all the marshmellows and all the butter in the recipe and then I butter my hands so I do not stick to the "critters"

I'm not joking when I say that prednisone makes me ravenous.  So, with my way, I can eat twice as many for the same calories, and that works best for me.  I do use the cocoa krispies.  Sometimes I just make a one cup serving in the microwave because the more I make, the more I'll want to eat.  I watch sugar very closely too, just as closely as fat,  although if left to my own devices I would eat an entire can of sweetened condensed milk with chopped up fresh coconut.  That was a great comfort to me as a kid. 

When I had my transplant they told me that many people gain 50 or more pounds post-transplant, mainly due to prednisone and loosened restrictions.  I've gained only about ten pounds since I was 26 and first started D but  it has not been easy.   Worth it though, in my opinion.
