Sorry guys, tamales are gone! For our first attempt they were actually pretty good. We all chipped in and had an assembly line going on Christmas Eve. The nephews filled the tamales with meat. We probably should have supervised a little better because they were very stingy on the pork filling! But it was a lot of fun and a great way to get the family together. I hope my sister hosts it again next year.

Tonight we had cheeseburgers with tomato and mozzarella salad. It was hubby's birthday so he planned the menu.

We are going to the movies later and will enjoy some sinfully butter laden popcorn too. Then, it is time to slow down and eat healthy to lose some of this weight I put on. Ugh! When I look at the scale I wanna  :puke;.

Hmmm - sounds like a good candy recipe, cherpep.  I've got all the ingredients here.  I was wondering what to take for dessert for the last family get together this Saturday - I think I'll make some of those to go with the truffles I've already got planned.

Today is my stay home and cook ahead day.  I'm making burritos, coffee cake, two different kinds of homemade soups, as well as cookies and candy for the party.  Then I tuck small batches of everything in the freezer for later.  I don't know what I'm having for supper, but I'm betting it will be a little of every thing!

I'm making soup, too.  Beef and every vegetable in the frig...  I had my black-eyed peas for lunch (traditional for New Year's in this part of the world).

Yup, what do you want, kit?  potato, ham and cheddar soup with veggies?  chicken noodle soup with egg noodles?  The Buckeyes are done; there's a cream cheese and cherry coffee cake in the oven, and the 2 pans of burritos are rolled and ready to be the main dish at the family party on Saturday.  All I'll have to do is tuck them in the oven to heat them up and melt the cheese.  I haven't finished the truffles yet, but I'm working on them.  They are chilling right now before I start rolling them in toppings.  I'm thinking about making a peach cobbler yet for the party as well, instead of cookies.  It's healthier if there's fruit in it, right?
At any rate, I have a freezer full of well-stuffed little tubbies for the days I don't feel like cooking anything.

yummmm the soups sound sooo good!  I made Italian Stew the other night.  It was delicious!  Would love to have some of yall's soup and stew recipes!

Tonight we had catfish, chips (fries) and hush puppies.  I didn't eat much though.... carbs carbs and more carbs! 

(My brother made it and had alot so they brought it to us)

My potato cheddar goes something like this - boil the taters in water with soup base added in the biggest pot.  Use stock if you've got it, or ready made broth if you don't.  When the potatoes are boneless, chop up some onion, some ham, and whatever else you have on hand - left over bacon bits, etc.  Stop adding stuff when the pot gets full.  Add some pepper, a dash of garlic, and when it all starts to boil again, add some milk and a handful of shredded cheese.  Thicken it up with whatever you have on hand - instant mashed potato flakes work well and can be added directly.  If you use flour or cornstarch, scoop out a bit of broth, whip in the thickener before stirring back into the pot.

My parents owned a restaurant, and I cook the way my dad taught me - I cook and bake a lot by just adding things in approximate proportions until the texture looks right and it tastes right.  The results are good - the recipes are iffy!

The burritos were a hit at the family party.  Nothing like dragging out an old family favorite to make everyone happy!

Yum, that sounds easy enough, except what are boneless potatoes?

Donnia - I make my beef veggie soup in a pressure cooker, but you can do in a regular pot if you don't have a pressure cooker.   I am also very much a "little of this, little of that" kind of cook (and it took me many years to learn how to bake...)

Beef vegetable soup

Cook meat and make the broth:

1-2 lbs beef (stew beef, chuck roast; I also like to use some beef bones if I can find them or oxtails if the price is reasonable)
1 c. finely diced carrot
1 c. finely diced onion
1 c. finely diced celery
garlic to taste (I use an entire head, maybe 10-12 cloves; it mellows!)
1 bay leaf
canola oil
water or broth to cover meat and veggies

Cut meat into chunks, brown in hot pan with a little oil.  Turn meat until it is nicely browned on all sides (don't
overcrowd pan, cook in batches if necessary).  Remove browned meat to plate.

Add a small amount of broth or water to pan and bring to a boil.  You want to get the browned beef bits up off the bottom on the pan without evaporating all of the liquid. Add meat back to pan, add veggies, garlic and bay leaf.  Cover with water (or broth if you have it) and bring water level to about 1" above meat and veggies.  At this point I put the cover on the pressure cooker, bring it up to pressure and cook for 20 minutes.  the pressure cooker really keeps the flavors in the pot.  Without the pressure cooker you will need to simmer until the meat is just getting tender (probably will take a couple of hours).  Don't worry about the veggies disintegrating - you are trying to extract every bit of flavor from them.

Make the soup by adding:

3-4 c. assorted sliced or chopped veggies
water - probably at least 2 cups (use judgment based on how thick you want the broth to be)
dry or fresh herbs (I add thyme; we also like Mrs. Dash)

When meat is tender strain the broth to remove the first "flavoring" vegetables or just leave them in.  Add soup veggies that you like, such as  carrots, green beans, corn, zucchini.  If tomatoes or potatoes aren't an issue, those work well, too.  Simmer until vegetables are tender (30-45 minutes; depending on how you cut them).  For the last batch I made, I added canned diced tomatoes, but no potatoes, and served it over pasta that I cooked separately.  We sprinkled parmesan cheese on top before eating. Salt at table or while cooking depending on dietary requirements.

My daughter got a new Cool Daddy for xmas, so tonight we had fried flounder, hush puppies,
shredded potato tots, and cole slaw.  It was delicious but I only ate a little, like Donnia carbs, carbs, carbs.  The soup's sound great.  We've got a ham bone, I think I will make a potful

You can make soup/stew!  It's not that hard.  You can brown the meat in the oven if that's easier than watching the pot.  Then just throw everything in the pot at once and simmer on stove until the meat is tender. It will taste good!  Or, if you have a dutch oven, you can cook the entire thing in the oven on a lowish heat (325 F for a couple of hours).  I would still try to get the meat browned first because you will get better flavor.   :cuddle;
