We went to the beach this afternoon with Marvin's brother Walt and his wife.  Marvin took us to our favorite seafood restaurant.  I had boiled shrimp and fried oysters -- yummy.  Marvin had fried shrimp and deviled crab.  Oh, it was delicious....

King Ranch Casserole

a member asked me for this recipe a few months ago -- finally posting it

6 chicken breast halves, cooked and diced
12 corn tortillas, cut into squares
1 med onion, chopped
1 bell pepper, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
8 ounces shredded cheddar cheese
1 can diced tomatoes with green chilies --- like rotel
pepper - recipe calls for garlic powder, salt and cayenne pepper
2/3 cup chicken broth

pour about 1/3 cup of broth over the bottom of a 13 x 9 inch baking pan, layer half of the tortilla quarters on the botton, then half of the chicken, onion, bell pepper, and dollops of about 1/2 of both soups, sprinkle with a little garlic powder, salt and cayenne pepper -
repeat layers , spread tomatoes over the top and drizzle with remaining chicken broth
cover with foil and bake for 350 for 45 to 55 minutes, until bubbly

I never have done it except for turkey giblets in gravy.
Dirty rice has chicken liver?

depends on the size pan you use
but in a 9 by 13 it is two
I like to use a smaller pan than the recipes requires
my family like the corn tortillas in it
it does not matter whatever you like
I will post the dirty rice recipe
you can use susasage or lean hamburger meat instead of livers or gizzards
but that does give it kind of a wild taste
my family eats it either way :cheer:

Dirty Rice Recipe

1 (14 ounce) can beef broth
3/4 c regular rice
3 tbs margarine or butter
3 tbs all purpose flour
1 cup finely chopped onions
1/2 cup finely chopped bell pepper
1/2 tsp garlic powder
1/2 tsp salt ( I do not use this)
1/8 tsp cayenne pepper
l pound chicken livers -- ( or hamburger meat or ground turkey or sausage - you may not like the wild taste of livers)
1 (3 ounce) can of mushrooms - sliced
combine the first two ingredients in saucepan, bring to boil, cover and cook per rice directions, melt butter, stir in flour
cook and stir until brown
stir in onions, celery, green pepper, garlic powder and cayenne, cook until onion is tender
coarsely chop livers
stir liver and undrained mushrooms into the onion mixture
cover and cook over low heat
about 6-8 minutes
stir often
fold liver mixture into hot rice

the liver gives it the "dirty " rice taste

but I have used other meats - cook & drain meats before you start recipe
my husband likes Jimmy Dean hot sausage in it

:bow;  your wish is my command

slow cooker stuffed peppers:

1 package (7 ounces) spanish rice mix
1 pound ground beef
1/2 cup diced celery
1 small onion, chopped
1 egg
4 medium green bell peppers, halved lengthwise, cored and seeded
1 can (28 ounces) whole peeled tomatoes, undrained
1 can (10 3/4 ounces) condensed tomato soup
1 cup water

set aside seasoning packed from rice. combine beef, rice mix, celery, onion and egg in large bowl. divide meat mixture evenly among pepper halves.

pour tomatoes with juice into slow cooker, arrange filled pepper halves on top of tomatoes. combine tomato soup, water and reserved rice mix seasoning packet in large bowl. pour over peppers

cover: cook on low 8 to 10 hours.

(changes i make, i just can't leave a recipe alone): i mix the seasoning in with the meat mixture. i use chopped tomatoes instead of whole. i add chopped chili's. i use a little chili powder in the tomato soup mixture. i also leave the peppers whole and stand them upright in the crock. depending on how mushy you want your peppers you might not want to let it cook 8 hours and certainly not 10.)

I think I will make it the Sunday after Thanksgiving

I had tilapia baked in a Baja lime flavored marinade
it was sooooooooooooo good
my husband drove a school bus to a basketball game for the girl teams
so I lived it up :yahoo;

Well, I'm cooking with no recipe in mind, just making it up as I go along.  I took a pound of best quality all-natural, no antibiotics, extra lean, ground beef, sauteed it with a tablespoon of Pataks mild curry paste, onions, garlic and freshly grated ginger added some diced red peppers, a diced fresh tomato, 4 finely chopped Chinese eggplants (they cook down and make the sauce).  I was going to add zucchini but I think I'll add some okra (I but it frozen) at the end instead.  I'm going to cook some extra aged basmati rice (especially nice nutty flavour)  to have with it tonight but I made lots so I'll mix leftover rice with the beef mixture and maybe some corn and bake it like a casserole for during the week.   It may evolve a bit differently if I find anything else that needs to be used up.

Fresh organic raspberries with lime sherbert for dessert I'm thinking.  I buy the lime sherbert but what I really like to do is scrub a fresh lime and sprinkle finely grated lime zest on top. 

I wish I could cook like I used to without worrying about renal taboos.
