I tried hard to be careful today but it was very tough.  I went to a huge (120 women) shower for a girl I've known closely since she was 7.  The groom is Italian and the shower was a sit down lunch of 4 courses and cake as a fifth course.

We started with an antipasto plate with prosciutto and melon, grilled peppers, bocconcini, eggplant and shrimp and octopus salad.  Next the pasta which was a spinach and ricotta cheese lasagna.  Next was chicken parmigiana with mesclun salad, roasted fingerling potatoes and veggies.  Then a very nice fruit salad, coffee and cake.

I skipped the first course except ate the grilled peppers and eggplant.  Ate a 1/4 of the lasagna, a third of the chicken breast and the fruit salad.  Wee slice of cake and an espresso.

The wedding is on Valentine's Day and there will be 7 courses at the wedding dinner.  Maybe I'll have a transplant by then.

Lamb is my favorite meat.  So many ways to cook it.  Easter dinner wouldn't be Easter dinner without lamb.

Wow Monrein.  Lamb is one of the meats that I am suppose to eat because it is beneficial for me.  I just had it the other day.  My mom used to make it but have not had it before in my marriage.  I need to have it more in the future.  I have no idea how to cook it, but bake it in the oven.  Any recipes would be very welcome--Please.

Supper last night.
2 oz. sirloin tip meat
1 cup of carrots
1 cup of broccoli
1/2 cup of pineapple in juice.
