For the first time in years we had Kentucky Fried Chicken.  My youngest grandson didn't
care for KFC, so we got our fried chicken from other places or fixed it at home.  However, it has been several years since we fixed it at home.  It tasted pretty good considering we hadn't had it for a long time.  None of us are supposed to eat fried anything.

Yesterday I made my homemade tomato sauce, simmered it in the crockpot all day.  MMMMM it smelled delicious.  I also made homemade meatballs and cooked some sausages, added it to the sauce and let that cook all day also.  Boiled some pasta and a loaf of french bread to top it off.  It was very delish!

Tonight we are grilling cheeseburgers along with a big salad.

This is dinner tonight again.  Almost the same as my last supper post.   Half a burger, taboule salad, grilled portobellos, grilled red peppers, grilled artichoke heart and fresh baguette.

We grilled today.... pork ribs, beef ribs, sausage, potatoes with onion, cabbage with bacon, pea salad,  flour tortillas for the hubby, corn tortillas for me (patting myself on the back) and
pico de galllo.

 I love making my vegetables on the grill!  YUMMY!!!

My belly is full..... not too full though, I was a very good girl... and now I am ready for the Cowboys game to start!!!

That's a sundried cherry tomato on the artichoke Twirl.  Sorry you didn't think it looked tasty.  I enjoyed it a lot.

At the Vietnamese restaurant was it Pho (pronounced sort of like Fa) but anglos say Fo?  That's soup with beef or a variety of meats and rice noodles and some veggies sprinkled in.  I love it but don't do the salty broth any more so I get different stuff now.

and a lot of lettuce
and way too much broth
and some sprouts
the mushroom on your plate looks yummy

donna and mibarra---- don't texans eat yummy food   green chicken, cheese enchiladas, tacos and tamales
          so where is your husband's recipe for cheese enchiladas and green chicken
Allen is coming home this weekend after a long time, he misses my cooking?   the football players eat like kings--- steak and popcorn shrimp-
and he misses his mommy's cooking----( I added the mommy part :-*)

I made a roasted chicken with stuffing and potatoes, carrots and green beans with fresh sliced garder tomatoes. Pumpkin cheese cake for dessert. Very good but with myself and my daughter only, we will be eating that chicken all week, it was bigger then I thought. ;D

twirl.... I honestly don't think you can beat Texas foods!!!  (Just ask my hips, they will tell ya)

Tonight we had leftover sticky chicken (When I made it a few weeks ago, I made 2 and put one in the freezer), baked potato, pea salad and green beans.

Green Chicken Cheese Enchiladas --- this is my husband's recipe.. I don't guarantee it!  =)

Chicken pieces with bone - boil with carrots, celery, onion, parsley, garlic, salt -- whatever you want
Corn tortillas
Greene Enchilada sauce - medium or regular if you don't want spicy HATCH is my favorite, but Old El Paso will do too
White cheese - mozzarella or Monterrey jack shredded
Cheddar cheese - shredded
Cut up green chilis - they're in a can in the Mexican section -- small little can - Herdez makes the best in my opinion

Heat up sauce. Dip tortillas in it to soften. Fill with chicken and roll up like a taquito. Place all rolled up tortillas in a casserole dish. Slather with the enchilada sauce, poor the chilis on top too.. Slather with white cheese.. Poor a bunch of cheddar cheese on top of that. Bake around 375 for 20 minutes. Not a dialysis friendly recipe with all the cheese. You can cut some of the cheese to make it a little better on the diet. (OK, cut a bunch of the cheese and it MAY be okay!)  =)

I'm thinking I might go out for shrimp and veggie tempura.  I'm slowly losing weight so I might overlook the deep-fried factor which is usually against my "rules".

Fall comfort food!

I went shopping today, and got what I needed to make the potato soup, as well as meatloaf and chili.  Tomorrow, I'm stopping at the farm to get fresh apples - I want crisp and pie and baked apples in raisin sauce. . . .
