Ohhh I'm going to try that Goat Cheese Pizza....and that shake..........ok donnia...please the cabbage stew recipie..it sounds great. I had a flounder, coleshaw, potatoe salad and am full.

Lost vision due to retinopathy 12/2005, 30 Laser Surg 2006
ESRD diagnosed 12/2006
03/2007 Fantastic Eye Surgeon in ND got my sight back and implanted lenses in both eyes, great distance & low reading.
Gortex 4/07. Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.

Pork chops, squash and zucchini with onions, small baked potato.... I think a little later I will have some cottage cheese with pineapples.
GMa... the squash stew is yummmy!!! This makes quite a bit... you could probably 1/2 it and have plenty for 2.
1 large head cabbage
2 pkgs polish sausage (last night I used one that was jalapeno cheese sausage and it was great!)
1 26 oz can tomato sauce (you could probably use alot less tomato sauce if you are restricted)
1 26 oz can chopped stewed tomatoes
enough water to make it how you like it
Cut sausage into 'coins' and throw in large pot to start cooking a little.
Put can of tomato sauce, can of stewed tomatoes and water in and let simmer a little while you chop cabbage.
Chop cabbage and add it to pot. Stir regularly so all the cabbage will start cooking.
I keep a lid on it to get it to cook faster.

Fettucine pasta with a homemade tomato, ground beef sauce. Since I can't eat too much of the tomato sauce, I thicken it up by adding some grilled oyster mushrooms, and grilled red peppers and if I want it really thick and hearty I add char grilled japanese eggplants (the long skinny paler mauve ones). Top with a bit of freshly ground romano (or parmesan if you prefer it). Or go all out and add freshly chopped parsley to garnish.

Thanks donnia..I'm going to try that cabbage stew when my honey comes to visit...we both love cabbage..a friend of his last week made cabbage and onions "fried" in butter and he said it was so good so I'm going to try that too. Not sure what seasoning to use on that tho..any ideas anyone?

Here are some ideas.
I also like cumin because its strong flavour helps me to miss salt less. Be sure to toast the cumin seeds in a bit of butter or olive oil for best flavour. Cumin is a spice that people seem to either love or hate. I love it.

This is soooo not low fat, but I like to fry a package of bacon (I cut it up into one inch pieces) in a large stock pot and when the bacon is done I add about 1/2 - 1 cup of water. I then add cabbage (usually about 1 med - large head, chopped). Cover and stir frequently to prevent burning. I don't add any seasoning.
Tomorrow I am making sticky chicken..... any ideas on low carb sides that are good 'fillers'.... since I can't really eat mashed potatoes... maccaroni and cheese or rice.
I do have some squash and zucchini in the fridge... how about a casserole that is filling to go with the chicken. Any good recipes?

This is absolutely delicious!!! I sometimes double the recipe and do 4 chickens at once then freeze 3 of them.... they freeze great!
Sticky Chicken
2 whole chickens
3 tsp salt (I use alot less) 2 tsp. paprika
1 tsp cayenne 1 tsp onion powder
1 tsp thyme 1 tsp white pepper
1/2 tsp garlic powder (I use more) 1/2 tsp black pepper
1 medium onion chopped
Clean chicken, remove giblets and pat dry. Combine all the dry seasonings and put 1/2 spice mixture into each chicken, both inside and out, making sure it is even and down deep into the skin. Place each chicken in a resealable plastic bag, seal and refrigerate overnight. When ready to roast chicken, stuff each cavity with onions, and place in a shallow baking pan. Roast, uncovered, at 250 degrees for 5 hours (yes, 250 degrees for 5 hours). After the first hour, baste chicken occasionally (every half hour or so) with pan juices. The pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it. Let chicken rest about 10 minutes before carving.
I use this recipe at Thanksgiving too.... It is soooo tender and delicious!
So, tonight... Sticky chicken, squash and zucchini, leftover cabbage stew, small baked potatoes

Twirl, I AM from the south, the Jamaican South.
Taboule is a Middle Eastern salad made with bulgur (but I use white couscous instead) and lots of garlic, chopped parsley, bits of tomato, lemon juice, cucumber and fresh mint.
I only eat half a burger to watch my protein and phosphorus. No it wasn't a veggie burger, it was lean Angus beef.

OK Jay, next time I come to St Mary's are you coming with me to Woolfy's or not? Is it still around? My favorite place to eat though is Rundles in Stratford. Well, second favorite to a number of places in Quebec and Paris.
Being a "foodie" on a renal diet is my idea of cruel and unusual punishment.

Hey You "My Kidney" yup Wolfie's is still there but I will take you to a better place than that, the Westover Inn, 4 diamond rating... But you have to promise that we forget about the renal diet for the night!!!

I haven't heard of Rundle's, I will have to check that one, Woolfie's is hardly ever open, I think Fri and Sat night and maybe one other, there is never any cars there....it's right around the corner from where we live so I see it fairly often. Mind you EVERYTHING is right around the corner from where I live, considering how small of a town St. MArys is.

Sure, I like the Westover Inn. If it's good enough for Christopher Plummer it's good enough for me. Rundles is my all time favorite but we need to start saving now. Either way, I'll shelve my restrictions if you do the same.
