For those who don't know, Kentucky Burgoo is like a stew and there are probably as many recipes for it as there are for chili. Good burgoo is an all day process because all the meat is smoked (beef, pork, mutton, chicken). The veggies vary but usually include potatoes and/or turnips, tomatoes, corn, lima beans, chopped onion, pepper and celery. The consistency is usually not as thick as stew. I very seldom make it because most of the barbeque places around here have it.

Sounds good.  I think I'll be going through Kentucky in September, so I am going to have to look for this.  It sounds a little bit like something we eat around here that's called Brunswick Stew.  It would never have peppers or turnips, but does have tomatoes, corn and lima beans.  It's traditionally made with squirrel and rabbit, but we make it with chicken.

Well I'm suppose to see a nutition specialist at my transplant hospital July 28 to go over all my medical issues and eating habbits. That'll be fun! I'll probably get another list of food that I'll never eat like fish. Of course this isn't covered by insurance I'm told and will cost $120 dollars. $120 is starting to make me wonder on what else I could use that money for, 10 galllons of gas, partial payment for a prescription, so forth. I had a better diet plan and appetite when I was on dialysis, what went wrong is what I want to know ???

When you see that nutritionist Chris, make sure you tell him/her which foods you really dislike so they figure out alternatives with you.  No point having fish on any list if you hate it.  Only have things on the list that you'll actually eat otherwise you're just going to get frustrated again.

My dietitian tried that with me - wanted me to start eating things I don't like, never have, never will.  (Like fish, and cooked spinach.)  I just said no.  I'm an adult now - I refuse to eat something I can't stand, just because it's good for me.  She just kind of blinked in surprise when I said that.  Apparently, no one has ever simply refused before. . .   ;D

Never ate things I didn't like as a kid either. It stayed on the plate and ended up in the garbage, or if we had a dog, I would try to have him/her eat it and that usually never happened.

dietitianr listened to the diatician, ever! i've always done my own research. my lab values sit right in the middle of the range, the doctor is super pleased and i eat what i want. must be doing something right. i'm usually a good girl though, i'm always nice to the dietitian. the last time one gave me a list of what not to eat at thanksgiving i just smiled and took it. then tore it up when her back was turned. the doctor just laughed and told me i could eat anything i wanted at thanksgiving.
Going by my lab values is how I choose what to eat. What I would like to eat will make them go above normal and now my body is paying the price betwen diabetes, dialysis, transplant meds, and diet. All the good stuff is something I shouldn't have or doesn't contain enough of the right vitamins, minerals or whatever else they are searching all over my body for. Starting to wonder if "Ignorance is bliss" is true. Just have to get over the nausea and vomiting part if I force myself to eat.

it does help that i'm not diabetic and that no one is looking for specific vitamins etc. but i still eat pretty much what i want, i do know what to stay away from

Here's a great, simple way to make Brussels sprouts if you have a foreman grill.  Cut them in half and toss with olive oil.  throw them on the grill until lightly browned.  Eat them!  A friend of mine served these as hors d'oeuvres at a party.  They were a hit and it was enough to make me buy a GF grill!  I served them when I hosted my book club ladies and they were a hit then too.  If the brussels sprouts aren'y super bitter they will caramelize and get sweeter on the grill.  I also really like summer squash grilled this way.  We mostly grill outside during summer, but the GF grill is really easy when the weather isn't so nice.

First we had homemade salsa and guacamole and chips. We also made barbecue chicken, baked beans, fresh corn on the cob, watermelon and had brownies with ice cream and cool whip for dessert. (Family visiting, it was nice to eat outdoors.)

So far 1 Blueberry Nature Valley yogart bar, 1 Strawberry Nature Valley Yogart Bar, and 32 oz or was it 48 oz of decaf coffee, shoot can't remember how many cups I made. Well that just throws a monkey wrench in my fluid intake total.
