I was bad today. For dinner my husband and I shared a salad and a personal pizza from pizza hut heavy loaded on the pepporoni and the grease.

we ate at Godfather's Pizza by Splashtown in Spring
all you can eat 5.99
and the pizza is good, really good
I did not eat dessert but I hit the jalapeno pizza ------- yummy

The deep fried green beans are a menu item at T.G.I. Fridays and they also market them in grocery stores. They are breaded and frozen and ready to fry.

For the squash:
5-6 summer squash and i medium onion (grated in food processor)
1 egg
1 pkg. cornbread mix
salt & pepper to taste

Form into patties and fry in oil. You can add flour if mixture is too moist.

Diabetes -  age 7

Neuropathy in legs age 10

Eye impairments and blindness in one eye began in 95, major one during visit to the Indy 500 race of that year
   -glaucoma and surgery for that
     -cataract surgery twice on same eye (2000 - 2002). another one growing in good eye
     - vitrectomy in good eye post tx November 2003, totally blind for 4 months due to complications with meds and infection

Diagnosed with ESRD June 29, 1999
1st Dialysis - July 4, 1999
Last Dialysis - December 2, 2000

Kidney and Pancreas Transplant - December 3, 2000

Cataract Surgery on good eye - June 24, 2009
Knee Surgery 2010
2011/2012 in process of getting a guide dog
Guide Dog Training begins July 2, 2012 in NY
Guide Dog by end of July 2012
Next eye surgery late 2012 or 2013 if I feel like it

I've actually owned a couple in my day. It's very hard to work full time and keep up with a restaurant. It's a very demanding job.

open a bed and breakfast and we could visit and all eat breakfast on your porch and look out at the beautiful Kentucky view
and green beans and squash patties with a glass of vodka and OJ with something you grilled would be so lovely
BED AND BREAKFAST   FOR IDH MEMEBERS AND FAMILY ONLY        AN ELITE GROUP
( you do have some good sounding dinners that sound healthy)

Not sure about dinner, but for lunch in a little while, I'm going to have my leftover dinner from last night: tri-color tortellini with chicken and brocolli in an alfredo sauce! So good :bow;

Tonight, homemade crab cakes, herb butter noodles and whole baby carrots. Too hot to cook much. I did make some home made peppermint paddies. I put them in the freezer and I can't wait until later to eat them. So much better then York.

My son was in town this week-end and last night we all went to Red Lobster for lobster tails and shrimp.....

had the annual family picnic yesterday fresh roasted corn (6) dozen were eaten, brats- burgers, chicken, and an assortment of salads, and potato salad along with half a dozen desserts weather was good and no bugs, great day...Boxman

I see you're enjoying that "non" renal diet, Donnia!   Mac & Cheese AND mashed potatoes!   :clap;   :rofl;    I am not looking forward to being placed on the renal diet.  Lord knows I'm not looking forward to it.

Tonight I had a baked chicken thigh, egg noodles with spray butter, and canned spinach.  Oh yeah, and a piece of honey sweet cornbread.
