For those who don't know, Kentucky Burgoo is like a stew and there are probably as many recipes for it as there are for chili. Good burgoo is an all day process because all the meat is smoked (beef, pork, mutton, chicken). The veggies vary but usually include potatoes and/or turnips, tomatoes, corn, lima beans, chopped onion, pepper and celery. The consistency is usually not as thick as stew. I very seldom make it because most of the barbeque places around here have it.
dietitianr listened to the diatician, ever! i've always done my own research. my lab values sit right in the middle of the range, the doctor is super pleased and i eat what i want. must be doing something right. i'm usually a good girl though, i'm always nice to the dietitian. the last time one gave me a list of what not to eat at thanksgiving i just smiled and took it. then tore it up when her back was turned. the doctor just laughed and told me i could eat anything i wanted at thanksgiving.

What I would like to eat will make them go above normal and now my body is paying the price betwen diabetes, dialysis, transplant meds, and diet. All the good stuff is something I shouldn't have or doesn't contain enough of the right vitamins, minerals or whatever else they are search al over my body for. Starting to wonder if "Ignorance is bliss" is true. Just have to get over the nausea and vomiting part if I force myself to eat.
First we had homemade salsa and guacamole and chips. We also made barbecue chicken, baked beans, fresh corn on the cob, watermelon and had brownies with ice cream and cool whip for dessert. (Family visiting, it was nice to eat outdoors.)
