I grilled steak, onions and peppers and making my own fajitas.

Well, I called them pigeon peas as that was the closest to what we had in Jamaica.  Most of the time our cook made rice and peas with red kidney beans but as a special treat we had "guungoo" peas which were a local thing similar to pigeon peas  (a type of bean).  I love all beans and am sad they're so high in phosphorus.

Last night I made grilled fresh Ontario lamb loin chops with fresh lemon thyme, double boiled baby new potatoes sprinkled with wild mint that grows by the lake at the cottage, mixture of cauliflower, carrots and sugar snaps, mesclun mix salad with radishes and homemade vinaigrette.  Dessert was angel food cake and fresh cherries.

Tonight was dinner at a Middle Eastern restaurant.  Baba Ghanouj eggplant spread with white pita, half a grilled chicken skewer, saffron rice, salad with chopped parsley and rosewater turkish delight for dessert.  Later as a snack I'm having fresh local strawberries.

Beer can chicken tonight

lola, for the past five Forth of July's except this year I had a party in my backyard for family and Friends had up to 50 people and I called it the "Beer Butt Chicken Party" I cooked (6) chickens along with about 50 brats and a dozen or so wieners...Boxman

I ate at The Steelhead tonight. A fine dining restaurant in the Marriott. Food was SUPERB, and words can't describe the taste for each bite.

I started with a cup of Steelhead chowder.

Then I had the Pasta of the day, which was penne pasta, olive oil, baby spinach, olives, tomatoes, black pepper, other spices, and scallops.

My dessert was cheesecake with roasted strawberry's and graham cracker crumbs on top and a sugar crystal.

I wish we had one of these in Iowa!

chicken cream cheese enchiladas left over from dinner last nite at on the boarder. who can eat all that food, enough for last nite, lunch and dinner today.

For those who don't know, Kentucky Burgoo is like a stew and there are probably as many recipes for it as there are for chili. Good burgoo is an all day process because all the meat is smoked (beef, pork, mutton, chicken). The veggies vary but usually include potatoes and/or turnips, tomatoes, corn, lima beans, chopped onion, pepper and celery. The consistency is usually not as thick as stew. I very seldom make it because most of the barbeque places around here have it.
