Tonight we had Chicken Kebobs with Yellow and Green pepper and Onion on them. Rice on the side and some mushrooms. oh and also dun dun dun..... LEMON water

Tonight I made a nice London Broil and some spicy rice. (Rice with spicy Mrs. Dash and Red pepper flakes.) I also had some tasty diet root beer and of course some binders.

What's Yorkshire Pudding?

They are made from flour, egg and they juice from the meat. you pour the mixture into a muffin pan and cook for 30 minutes. If you want exact recipe let me know, they are quite tasty...Boxman

Grilled marinated chicken for my son and I.  Rob had grilled sausages (lots of renegel with that!).  We also had some rice and corn.  Sounds boring, but it was yummy!

makes about 12 Yorkshire Puddings


1 cup whole milk                                                                                                                                                                                                           1  cup flour
3 large eggs
a pinch of salt
sunflower oil, for baking or juice from the roast (preferred)
muffin tin ( or two)

heat oven to 400°.
mix milk, flour, eggs and salt, cover and let rest for about an hour. fill each cup of the muffin tin with about 1 tablespoon of sunflower oil or meat juice. put in hot oven for about 10 minutes until the oil is flippin' hot. take out and carefully (hot oil!) ladle the mixture into the muffin tin. bake in the middle of the oven for about 20-25 minutes until crisp and golden. it's tempting, but dont open the oven while those yorkshire puddings are baking. they are like a little soufflé and would collapse in a sec.

serve hot with roasted lamb, chicken or roastbeef.

My mother makes a roast beef dinner every Sunday.  Roast beef, Yorkshire pudding, mashed potatoes and green beans.  Often I only eat the Yorkshire puddings because it is all I want.  I LOVE them.  You can also make them in a big pan and make just one big one and then fill it with chili.  Delicious!!!!!!!!

Twirl, they are soft on the inside like pudding. I would also recommend using the meat juice instead of the oil it just gives them a better flavor. Remember don't peak until time is up...Boxman

last night for supper, took my night meds with it.  Wanted something to make my tummy feel

OMG...Yorkshire pudding...sooooooooooooooooo gooooooooooooooooood.  My british grandmother used to make those with roast beef and brown gravy.  She rarely cooks anymore, but there's a British restaurant about 20 miles away that makes roast beef and yorkshire pudding on Friday and Saturday nights.  I really need to go again. Soon.

Tonight was simple.  Chicken noodle soup and apple slices with warm caramel.  Light and delicious.
