Chocolate is high in phos and potassium.  Dip a hershey bar in peanut butter. . . yummmmmmm!

Dinner - oh, shoot, guess I should find some.  Smoked sausage was buy one, get one free, so guess I'll grill up a bit  with some veggies.

At the center Monday the dietician's staff had all cooked or prepared something to taste (renal recipe)...Some of it was quite good.  One guy made sausage.  He handed out a booklet with the recipe.  It was delicious.  Problem, the recipe is for patties but he stuffed his in a casing and grilled it.  How the heck do you stuff sausage in a casing.  The basic recipe is fairly simple but wouldn't it take forever to  cram it down some kind of gut????

They make a little machine that stuffs them for you.  You just fill it and turn a hand crank.

baked chicken thighs in Picante sauce
when done - cool and pull meat off bones --  add low sodium chicken broth - carrots, celery and other vegetables and simmer and you have chicken soup

my husband --  eggplant, rice and bee casserole ---- I mean beef   

dessert -- sliced fresh strawberries in an ice cream cone
the end

Lunch today was going to be blackened tilapia, but it didn't happen -  I ended up eating a hot dog with mustard and onions instead. Tilapia will be for dinner, then.

Blackened Tilapia: coat tilapia in Cajun spices (I mix my own to avoid the salted mixes) and let sit 20 minutes. Pan fry in a cast iron skillet on medium-high until cooked through and both sides are blackened. Serve with rice pilaf and vegetables.

A Cajun spice mix is usually garlic powder, onion powder, paprika, black pepper, white pepper, thyme, cayenne, and oregano, sometimes with other spices or dried herbs added. Emeril's Essence is one example.

Made a really nice pork loin roast tonight. 5 lb pork loin, coated with a paste of finely chopped fresh thyme, parsley, and dried rosemary, garlic, olive oil, salt, and pepper. Roasted to 160 sitting on top of some halved white potatoes, baby carrots, onions, and celery. Served with a parsley-shallot-mustard sauce.

I've never had lean pork come out so juicy - it was excellent.

We had a nice fatty chuck roast, put it in a pan, peeled one potato and 4 carrots, and put canned golden cream of mushroom soup over the top. Hubby loves it like that. But, today I got adventureous and made peanut butter cookies with white Splenda and brown Splenda. Amazing, they taste like peanut butter cookies. Husband is diabetic.

LOL!  I was just reading the posts, started with the most recent and moved up.

Mmmm chuck roast with all the fixins - my favorite dish.  Then, the pork loin roast with all those fresh herbs and nummy sauce.  I'm getting hungry just thinking of all the flavor and smells and just thinking SAVORY... then manda's "tomato soup".  it just struck me as very funny!!  I love tomato soup, but not after filling my senses with all that savory!  :)   :rofl;

Lemon roasted leg of lamb with rosemary and a red currant jelly based sauce.  Baby new potatoes sprinkled with fresh mint, green beans braised in onion, tomato and garlic and a nice mixed green salad including mâche which is one of my favorite salad greens and homemade vinaigrette. 

Dessert is a fruit tart from a pastry shop I like a lot.  The base is like a shortbread cookie then there's whipped cream and a variety of tropical fruits in this particular case.   It's not without calories but it's much less than many of the other very decadent things they make.

 :rofl;  you're right twirl, I don't eat those deep fried things...it's one of my "rules" for health, but does classy include just a little bit of lamb sauce on a white linen blouse?  I really hope so because I like being thought of as classy as long as I'm not thought of as snotty (perhaps that should be snobby).
