My positive: I remembered I had an IEP meeting after I got all the way home and almost into the house. Hubby drove me all the way to school for my meeting.  Sweet of him!

Victor is a gem!

And I am greatful for this daughter in law.  She and I have always had a nice relationship. They are a very sweet, loving family (thank goodness for one!)   :rofl;

I got out of hospital today after a few days because of a heart scare.  My positive is that I definitively do not have heart disease and my arteries are really good.  Yay.  (Family history is bad, so they were worried).

wow hanify, your positive is good enough I think I'll just enjoy your good news......

My positive is that I don't go to dialysis today.  Go to get my hair cut instead.  At least I'll be pretty.

My positive is that the Mother's Day gifts we are making this year look really sweet. The moms are going to love them.

And I'm glad that Hanify has a good heart and that Dan is going to be pretty (at last!)

Had my surgery staples (18) removed today and also my PICC line  (about 14 inches of it).  I'm now all natural again, well not counting a fistula, and a gifted kidney but you all get my drift.  No metal or tubes or caths or other artificial parts.

Had my hair done, the City has finally laid new sod on my yard that's been dug up since last fall and if the pharmacy picks up my IV pump on schedule I plan to go have a pedicure this afternoon.  I'm making organic hamburgers (we only eat red meat once or twice a month) on multigrain buns for dinner with a big salad  to go with them AND the sun is out at this moment although it's been cloudy all day.

I love a day with a whole lot of positives....and wish you all the same.

Those are LOVELY positives, Monrein!

Although I'm fighting a headache, I saw a hummingbird a few minutes ago, and there are bluebirds in our bluebird house. I love birds. (Oh-oh! that will come back to haunt me on another thread, I bet!)

willow, hope your headache goes away.

My postive, my house is tidy and I don't have to go out the rest of the day.

Yes, I do, too. We have a picnic to attend tonight and I really want to feel great for it.  :)

We just came off the machine and Carl is holding his sites. Then back to school to finish up the after care routine.  :waving;

8 days until the flea market.  I think I'm ready, and I think I might manage to survive the next week!  That's a positive thought, right?

I hope things go great at the flea market.  I would love to be there to see everything you made.  I love sewing and crafting.  It relaxes me--unless I have a huge deadline!  Good luck

I bought and eggplant.  The chart said it was low potassium.  It sure is pretty.  Nice and purple.  Now what do I do with it?

Fried eggplant is yummy but not sure that's the best way to eat it.

Can't you just dice it and heat it up in a pan with a bit of olive oil?  Add a few other veggies - sort of a stir fry thing?  Like you do with a zucchini?

It's the first rainy thunderstorm of the year outside right now.  I love thunderstorms - I'm going to sleep like a rock with the rain pounding on the roof.  Ahhhhhhhh.  Good night!

Slice your eggplant in 1/2 inch slices lengthways.  Sprinkle a little salt on both sides.  Let it sit for 20 minutes.  Squeeze off salt and moisture with paper towels, this step is to remove any bitterness and is unnecessary if eggplant is very young or if it is the pale mauve chinese variety.
Brush on both sides with olive oil and grill until charred lightly and softened.  Nice in a sandwich with grilled zucchini and red peppers.  A little goat cheese is nice there too, but be careful because of salt and potassium in the cheese.  A speck will do.

Grilled eggplant is a good addition to a little tomato sauce for a pasta sauce that is lower in potassium than eating straight tomato sauce.
