Tonight i had a turkey breast sammich with a slice of cheese  :o and 1/2 corn on the cob (plain)   Now i want to eat the other half of that corn with some mayo, parmesian cheese and some hot sauce  :P

Dinner was cherry tomatoes, sliced cucumbers, and baby carrots with dip, wheat thin crackers with a little bit of sharp cheddar, and applesauce for dessert.  I had to make up for my junk-food lunch from KFC!

That is the one thing I love about visiting Chicago.  You can go to just about any corner in some neighborhoods and find a corn vendor.  Mmmmm, I want some now thanks Goofynina.  ;D

That is the one thing I love about visiting Chicago.  You can go to just about any corner in some neighborhoods and find a corn vendor.  Mmmmm, I want some now thanks Goofynina.  ;D

They are called Elote's and over here,  they ride bikes through your neighborhood honking there "honka honka" horns, lol,  i am glad to hear i am not the only one that likes to eat them like that, i am surprised at how many people get grossed out over the thought of eating it that way,  they just dont know what they are missing huh  :2thumbsup;

Absolutely, you have not had corn until you have had it like that.  I just wish I could find it somewhere else other than just in the city.  Yeah you can make it at home, but it's just not the same.

I guarantee if you'd try it, you'd love it  :2thumbsup;  You can also make it with canned corn, just drain the corn, add about a tablespoon of mayo, some parmesian cheese and a couple of shakes of Tapatio Sauce (that's my favorite) and mix it up and ENJOY!!!  It really is quite delicious  :2thumbsup;

No we are not pulling your leg on this one.  It is a very popular Mexican snack/treat/food (not sure how to classify it).  In the city of chicago you can go to just about any neighborhood (won't find this downtown unless it's during the taste or one of the other festivals) and find these people with carts set up on the corners with big golf umbrellas that are selling the corn, fruit, flavored icees, and numerous other things.

Normally it's done on the cob, but as Goofynina said here you can make it easily at home with canned corn.

You can also make it with canned corn, just drain the corn, add about a tablespoon of mayo, some Parmesan cheese and a couple of shakes of Tapatio Sauce (that's my favorite) and mix it up and ENJOY!!!

Okay. I'm convinced!!! Heck, any excuse to have mayo. and parmesan. and corn.  Okay, and hot sauce too!!!!  I admit it, I like my hot food!!! I was sooo jealous when you guys got to go to that taco place in California, it was featured on food network, and it was soo cool! I was thinking, man, I KNOW people who've gone there!!!!  Tacos.....yum!!!!! Heck, just about anything spicy is YUM!!!!!

How I have a question....my husband is tired of the restricted diet....he wants a steak, mashed potatoes, gyros, polish sausages, and Italian beef and now that he is on dialysis, is it safe to cheat since the machine will clean him out or should I still be very watchful?  I don't want to "kill" him by cheating.....

He can have all that meat, on dialysis you need protein.  Plus if his K is okay he can have a small serving of potato.  If you know how to leech the K out of them he can have them more often and a bigger serving--look for leeching potato cause I don't remember how it's done but it takes out the K out of the potato.  Does he like cauliflower?  I used to add a small amount of potato to the mashed cauliflower, ot add mashed carrot to it also.  I like vegetables so these kinds of things always worked for me.  I also add a sprinkling of cheese to the mashed cauliflower, the new cheese sprinkles by Kraft with the different cheeses like the Meditteranean (sp) with the feta is great.  Just a little bit adds a lot of flavor.

Meadow is correct, leaching the potatoes will enable him to have more, just peel and cut the potatoes into cubes, soak them in water for 2-3 hours, drain, rinse, and add more water to soak again (some say only soak once), another 2-3 hours, then drain that, and rinse it off, and either boil OR fry to your heart's content!

Tonight for supper i am cooking homemade Taco's and spanish rice :P  Only cuz my sister and brother-in-law are coming over, or else i wouldn't be cooking NADA  ;D
