How do you guys eat all this stuff and keep your potassium from going sky-high? I watch mine pretty carefully (never any potatoes, tomatoes, chocolate) and my potassium is still only 5.6. I'm envious, is all.

If it werent for being on PD, i probably wouldnt be here at all,  see, on PD i do it daily so it cleans out the potassium through the night.  On hemo i had big fights with potassium, now, doesnt seem to be a problem, thank God ;)

Last night i had nothing, i ate 3/4 of a hot dog at Costco around 3:30 pm and the crust to my hubby's pizza,  :-\

Steak Fries:   Cut Potato into steak fires and soak for 4 hours to get out as much K as possible.  Then line a cookie sheet with foil.  Rub EVOO (Extra Virgin Olive Oil) on them and season with Mrs. Dash.  Bake at 400 degrees for 45 minutes.  Very good as a side dish.

Those sound great!  Don't forget to peel them.  The skin of a potato has tons of potassium.  You'll cut out 1/3 to 1/2 of the K count by just peeling them.  :2thumbsup;

But doesnt the leeching help eliminate potassium from the peeling as well??

Skins will not leach as well as flesh.  You'd need to soak the peel to the point it practically disintegrated.  If I remember correctly a medium potato has about 900 mg of potassium with the skin and it goes down to about 500 mg without the skin.  Ditch those skins.  :2thumbsup;

My parents would be so proud that this is the kind of stuff I remember from college.   :D
