Ok, energency here.  I thawed a package of chicken tenders.  i'm sick of chicken.  What can i do besides broil?  I want something in sauce  (like something with cream cheese and noodles).... anything as long as it is not dry boring chicken.

Stir fry of some kind?  Or grilled but with a cheese sauce - made from scratch I mean - not some bought rubbish.

dw, beat up an egg and dip chicken in and then coat them with Parmesan cheese and light fry in olive oil and a little butter. They are so good and they stay moist.

Really easy.  Put some milk (a cup) in a pan, add tablespoon and a half maybe of flour and mix or whisk together.  Heat it up.  Add half a cup (or more if you like cheese) of grated cheese.  Heat it till it thickens. Pepper and salt to taste.
Pour over your cooked chicken.
PS I've just remember you're American.  To make grated cheese, take the cheese and run it down the side of your grater...lol

Easy cheese sauce
1 cup cold milk
1 tablespoon Argo® or Kingsford’s Corn Starch
2 tablespoons margarine or butter
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup (4oz) shredded cheddar cheese

In small saucepan gradually stir milk into corn starch until smooth. Add margarine, salt and pepper.

Stirring constantly, bring to a boil over medium heat; boil 1 minute.

Stir in cheese until melted.

Serve over broccoli, cauliflower, asparagus or baked potatoes.

Makes 1 cup

How does being American mean you don't know how to grate cheese?  ???

dwcrawford, I usually marinate and grill tenderloins like that, but I've also done other things like:

Shredded chicken tacos: cook the tenderloins in simmering water flavored with chili powder, tomato paste, salt, pepper, oregano, and cumin. Take them out, let them cool, then pull them apart into shreds. Put the chicken back in a frying pan with some chopped onion, garlic, and peppers, and add some salsa. Cook it until it comes together, then fill corn tortillas and eat like tacos.

Oven-fried chicken: mix 2 parts mayo with 1 part mustard, coat the tenderloins in that mixture, then dredge them in bread crumbs (I like the Japanese panko bread crumbs) seasoned with salt, pepper, onion powder, and paprika. Spray moderately with Pam, then bake at 400 degrees for 20 minutes or until done.

Truly fried chicken fingers: pretty much the same as above, but first dredge in flour, then beaten eggs, then the bread crumbs. Let rest for 5 or 10 minutes, then shallow-fry in about half an inch of oil until nicely browned and cooked.

Thing is that Hanify and Willie knew to whom they were talking...  my cooking skills leave a lot to be desired.  Problem here is renal diet and I need to eat chicken and cheese... low everything except calcium..

I did the coating with Parmesan simply because I couldn't figure out how to grate the cheddar.  Maybe somebody will give a class in cheddar grating.  Is it similar to grating the Parmesan.  (and how do you spell Parmesan?)

Restorer,  your recipes sound really good but they are way too  difficult.  I'd particularly like the chicken tacos but...

Oh, okay, cooking's a big hobby for me so I tend to take some skills for granted.

An easier variation on the chicken tacos is to just simmer the chicken in chicken broth for 20 minutes, then take them out, let them cool until you can handle them, and rip them up into shreds. Then put them back into a pan with a pat of butter and a bunch of canned/jar salsa, and just cook it on low heat until it's hot, then put that into corn tortillas. Only three steps - the hardest part is knowing when each step is "done," but it's pretty hard to go too long on any step of this recipe.

I have a food blog that I'd link here, but it's in a transition right now until I can decide on a name for it and get a domain name.

We went to the Elephant Bar and had Elephant steaks.  I am just kidding.  We had beef loin, watermelon, beans, coleslaw and a diet coke.  It was great. I ate hubby's watermelon and his coleslaw and everything on my plate! He had half my beans and some of my cooked onions.   I am content and full.

We had a large sald of lettuce, cukes and tomato and some grilled chicken. My salad had the balsamic vinegar, olive oil recipe and it was gooooooood. Also some ciabatta bread.
Unfortunately, 4 hours later I was starved, so I had a turkey sandwich.

Oh restorer, don't stop your recipes.  Actually I printed out the chicken taco one and another you posted a while back.  I could do it if I were having company or something but it is was too hard just for myself.  Usually I would have to go shopping to get an ingredient for even simple one.  I'm not a cook at all but a really "good" eater.  I even watch food tv channel though I've tried only  three things from there over the many years .. an avacado cake (like pumpking bread), the barefoot contessa baked eggs with herbs, and buttermilk ice cream (taste just like cheese cake).
