I love soup, soup sounds good. 

But tonight I am going to make meat balls in red chili on top of mash patatos.  Being from New Mexico I eat a lot of chili, green chili, red chili, chili chili chili.  Yummy!

I made broccoli and cheese cornbread for my husband - a double batch
tomorrow they are having a cook-off at Peet ( a junior high school )
he could enter cornbread or chili
we are out of venison so I made cornbread -
would have loved to do jalapeno cornbread but every teacher does that -
this is in the right section because MandaMe 1986 was posting about chili   :waiting;

Twirl can I have that broccoli and cheese cornbread recipe?  I have never heard of putting broccoli in cornbread.  That sounds really good, I have made broccoli and cheese biscuts before, they came out pretty yummy.

CHEDDAR CHEESE BISCUITS   

4 cups bisquick baking mix
1 and 1/3 cup milk
1 cup cheddar cheese, shredded
1 cup of chopped frozen and thawed broccoli
1/2 cup butter, melted
1/4 teaspoon garlic powder

Heat oven to 450. Mix baking mix, milk, broccoli & cheese  until a soft dough forms; beat vigorously for 30 seconds. Drop dough by spoonfuls onto an ungreased cooking sheet. Bake 8 - 10 minutes or until golden brown.
Mix butter & garlic powder. Brush garlic mixture over warm biscuits before removing from cookie sheet. Serve warm. Makes 24.

OK now for my meatball and chili recipe that is a little diffrent. Cause it is off the top of my head. 

Meat Balls

1 1/2 lb ground meat (I usually use lean hamburger or turkey)
garlic
a pinch of sea salt
black pepper
onion powder
3 eggs
and about 1 1/2 of oatmeal or plain bread crumbs, or crushed crackers.  It all depends on what I have on-hand.


Chili

Red Chili pods seeds and stems removed. Soak in water until soft.  Fill blender about 3/4 full add 1 table spoon of garlic, and 2 table spoons of veggie oil. Add water and blend.  How much water usually depends on how thin you want your chili so add as you go. 

Mix meatball mixture and form in to balls and cook.  Heat up chili in a pot or crockpot while cooking meatballs.  Then place meatballs in chili and simmer for about 20 mins. Longer if you have time.  I have been know to leave them in a crockpot for a few hours.

Anyone needs some Chili pods I am more then happy to send ya some!

Sorry if the recpie is a little lose.  I kinda made it up haha.  I also made up a red chili enchilada pizza! Haha yummy.

so you place chili with meatballs on mashed potatoes and then you get to eat broc & cheese biscuits

 ???
red enchilada pizza --- sounds good --- do you use masa for the crust --- we like barbecue chicken pizza

I googled cornbread recipes and found cornbread with cranberries --- husband wants to try it  :o

I bet cornbread with cranberries is pretty good. Let me know how you like it. And no I use pizza dough.  It is pretty good.  And yes I like me some red chili so I figured what the hell lets try it. And we loved it, so I keep making it. haha :clap;

Broccoli and Cheese Cornbread

4 eggs
1/2 butter or margarine melted  - not hot
3/4 teaspoon salt
1 (8.5 ) ounce package cornbread or muffin mix
1 (10 ounce) package frozen broccoli - thawed and drained --- I get the chopped into small pieces broccoli
1 cup shredded cheddar cheese  -- I use sharp
1 onion - chopped  - I used half an onion --- so my husband does not notice the onions as much

the last time I doubled it I added the salt doubled
and I think it tasted a little salty
everyone liked it
I am used to adding no salt
but I was afraid the cornbread would not rise
it got "honorable mention" at my husband's school
there were at lease 50 pans of all kinds of cornbread


in a bowl, combine eggs, butter and salt
stir in corn bread mix until just blended
stir in remaining ingredients
pour into greased 11-7-2  pan
bake at 350 for 30 - 35 minutes or until a toothpick inserted in the center come out clean
slice and serve
I usually double the recipe and put in into a greased 13 X 9 pan
this is so good

A stirfry of left over chicken, sugar snaps, carrots, red pepper, mushrooms, water chestnuts, onions, an egg, fresh ginger and garlic.  I cut the ginger into little slivers and soak them in a half cup  of water which I use as part of the sauce.  I use Hoisin sauce mostly for the sauce (less salt than soy or oyster sauce) but also a half teaspoon of oyster sauce, a little sesame oil and a fair bit of thai chili sauce (again because it's relatively low in salt).   I used rice noodles which I pre-soaked in warm water and added at the very end, tossing them in thoroughly with all the other stuff in the wok.  I prefer using "cellophane" clear noodle threads made from yams but I didn't have any at home so substituted the rice noodles.  I'm not sure how the cellophane noodles fit with a renal diet.

I sprinkled some raw but toasted by me, unsalted cashews on top but would avoid that if I were on D.  We enjoyed it.

03/2007 Fantastic Eye Surgeon in ND got my sight back and implanted lenses in both eyes, great distance & low reading.
Gortex 4/07.  Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.

Here you go Wattle

Blueberry Upside-Down Cake

2 C. fresh blueberries
1/2 C. granulated sugar
2 T. all-purpose flour
3 T. freshly grated lemon rind
1/2 C. butter, softened
1 C. granulated sugar
3 eggs
1 t. pure vanilla extract
1/4 t. almond extract
3/4 C. whole milk
2 C. all-purpose flour
4 t. baking powder
1/4 t. salt
1/2 C. toasted slivered almonds
Sweetened whipped cream

Preheat oven to 350° F.

Mix blueberries, 1/2 cup sugar, 2 tablespoons flour and lemon rind; spread evenly into a greased and floured 9-inch springform pan.
Beat butter and 1 cup sugar until fluffy; beat in eggs and extracts. Mix flour, baking powder and salt; beat into creamy mixture alternately with milk until just moistened. Pour over blueberries and spread evenly. Bake 50-60 minutes or until a wooden pick inserted in center comes out clean.
Let sit in pan about 5 minutes then place a serving plate over top of pan; carefully invert cake and plate together. Remove sides from cake pan. Serve warm, topped with almonds. Garnish with sweetened whipped cream as desired. Refrigerate leftovers.

Makes 12 servings.
