Cheese enchiladas, home made refried beans, and salad. I made them just for me because the husband does not like red enchiladas. He likes green. Too bad for him today!

Ha ha! Just red and green, usually.. Well there are mole enchiladas too and those are usually a rich brown color.

pronounced MOH - LAY -- a sauce made usually of peppers and unsweetened Mexican chocolate. It is delicious and usually served poured over chicken! Mmmm.. Now I am hungry for it!  lol

03/2007 Fantastic Eye Surgeon in ND got my sight back and implanted lenses in both eyes, great distance & low reading.
Gortex 4/07.  Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.

I love Mole, the mexican dish not the burrowing blind critter, and my friend Ilana has promised to make me some as a special treat now that I can eat it again.  A good  is fantastic but I've also had some nasty ones in Mexico.  Ilana spends ages making hers and the flavours are complex and layered.   The choc isn't sweet.

Well, it's not much of a recipe, twirl.  It's chicken salad rolled up in a taco shell - I don't eat much bread, so I haven't got any in the house to make a sandwich.

My version of chicken salad is, as usual, whatever I've got in the fridge.  Today that means diced chicken, mayo, pepper, parsley, a dash of mustard, diced onion, and diced cucumber (since I'm out of celery).

Layer the taco shell with lettuce, add a dollop of chicken salad, roll tight and hold shut with a toothpick, and enjoy.  I like to toast the taco shell in the toaster oven for a minute before I make a roll-up out of it.  Gives it better texture.

Yup, I mean a tortilla.
 - I don't know if Taco Bell wants any of my recipes - not enough grease!

I had a blast of inspiration - instead of the cuke, I diced up a green apple for some crunch in the chicken salad.  Yummmmmm!

I had Clean out the Fridge Chicken Soup for lunch today. I made it last night in the crockpot before I went to bed and cooked it all night. Hubby and I really liked it. I picked through the fridge for veggies and threw everything I had to use up in the pot. Then threw in some spices, 1/2 a shredded up rotisserie chicken from the grocery store, and some hot sauce.

Mole is spicy.. It does not taste like a candy bar or anything like that. The chocolate is unsweetened and mexican chocolate has cinamoon in it. My aunt (who has now passed) used to make an incredible mole! She was from Oaxaca and they are very well known for this dish and the chocolate.

i love clean out the fridge soup. i've done that for years. and yes anything and everything goes into it, it's always yummy and never tastes the same twice.

Twirl... we will have to get together for lunch this summer!

And the doggies could sit and watch us eat at the table, but they can't have any snacks. They're horribly allergic it seems to everything. I think I am going to have to take my bigger Yorkie to see a veterinary dermatology specialist. She is getting so bad and I hate to keep giving her prednisone since I know what it does the body.

I have no ideas for dinner tonight... Any suggestions? I am tempted to run through a drive thru of sorts.
