I had a "Texas burger" delivered last nite with a side of onion rings and a slice of cheese cake. That was my excitement for a Friday nite...Boxman

What's a "Texas Burger"? I love onion rings if they are fixed right and not greasy and cheesecake is my favorite dessert.  :cuddle;

It is a half pound of beef (I like it medium rare) with a onion ring some BBQ sauce and cheese on top. I opted out of the cheese though...Boxman

We had turkey breast.  Baked Yams and steamed broccoli.  Oh yeah and stuffing.   :clap;
I am suppose to be on 60 grams of protein a day.   :banghead;

We just had turkey meatball soup for dinner. I love it! We put parmesan cheese in it and Mmmm. It is good on a cold day. Dinner will be the same thing since I will be the only one in the house tonight! Yay!

Cabbage rolls, stuffed with lean organic beef and rice and baked in tomato sauce.  I don't take much sauce but add hot habanero pepper sauce.  Salad and an apple for dessert.  A Braeburn apple, crisp and fairly tart.

Diabetes -  age 7

Neuropathy in legs age 10

Eye impairments and blindness in one eye began in 95, major one during visit to the Indy 500 race of that year
   -glaucoma and surgery for that
     -cataract surgery twice on same eye (2000 - 2002). another one growing in good eye
     - vitrectomy in good eye post tx November 2003, totally blind for 4 months due to complications with meds and infection

Diagnosed with ESRD June 29, 1999
1st Dialysis - July 4, 1999
Last Dialysis - December 2, 2000

Kidney and Pancreas Transplant - December 3, 2000

Cataract Surgery on good eye - June 24, 2009
Knee Surgery 2010
2011/2012 in process of getting a guide dog
Guide Dog Training begins July 2, 2012 in NY
Guide Dog by end of July 2012
Next eye surgery late 2012 or 2013 if I feel like it
Home with Guide dog - July 27, 2012
Knee Surgery #2 - Oct 15, 2012
Eye Surgery - Nov 2012

as requested, pelagia:

Buckeyes

1 ½ cups powdered sugar
1 cup graham cracker crumbs
½ cup margarine or butter
½ cup peanut butter
Milk chocolate melting wafers

Mix powdered sugar and cracker crumbs.
Heat margarine and peanut butter over low heat until melted; stir into crumb mixture.  Shape into 10-inch balls.  Refrigerate for about 15 minutes or longer.

Melt chocolate wafers.  Using a toothpick, dip balls into chocolate, covering about ¾ of the ball.  Refrigerate until firm.  Then, hide quickly because they will disappear before your eyes!!

We are having my dad's famous posole (a Mexican soup with hominy, shredded pork and chicken, and peppers) and the tamales we made during our family tamale making party.
