Well, I'm cooking with no recipe in mind, just making it up as I go along. I took a pound of best quality all-natural, no antibiotics, extra lean, ground beef, sauteed it with a tablespoon of Pataks mild curry paste, onions, garlic and freshly grated ginger added some diced red peppers, a diced fresh tomato, 4 finely chopped Chinese eggplants (they cook down and make the sauce). I was going to add zucchini but I think I'll add some okra (I but it frozen) at the end instead. I'm going to cook some extra aged basmati rice (especially nice nutty flavour) to have with it tonight but I made lots so I'll mix leftover rice with the beef mixture and maybe some corn and bake it like a casserole for during the week. It may evolve a bit differently if I find anything else that needs to be used up.Fresh organic raspberries with lime sherbert for dessert I'm thinking. I buy the lime sherbert but what I really like to do is scrub a fresh lime and sprinkle finely grated lime zest on top. I wish I could cook like I used to without worrying about renal taboos.
Tomorrow I am making Len one of he's favorites, Manicotti
