Happy Birthday, Mr. KT!!!!! I had a reuben Saturday (before dialysis!!), in honor of St. Patty's Day. It was okay. It was Arby's, and I toasted it
when I brought it home so I would be nice and hot and crispy.  NOT as good as mine!!!

Katie, Tell hubby  for me. Corned beef and cabbage is one of Len's favorites, unfortunately he can't have the cabbage right now, maybe next year. HAPPY ST. PATTY'S DAY.

Does anybody know a good/easy recipe for German Red Cabbage?  I went to a dinner party a few months ago and a friend of mind did a German theme.  She hired a chef to cater the whole thing and one of my favorite that was served was the German Red Cabbage.  It was so good.  I can't remember the name of the dish.  All I can remember is how good it tasted. YMMMM OHHH!

I am not big on corned beef.
I am making crunchy tacos with seasoned beef, cheddar and jalapeno cheese, lettuce, tomatoes, olives and salsa.
My mom makes stuffed cabbage, its really good but I haven't had it in years.
I love Rueben sandwiches!

I have to share this...I made our corned beef in a clay baker with onions, red wine, pickling spices, parsley, and bay leaves. It was so good!!! Next time, I'll use the bigger clay baker so I can put the cabbage in as well. I had to just boil that on top of the stove.

Chinese food- every Monday night the hubby brings home Chinese food from this little place off 2nd street.  If the food were good... (But then who am I to complain. It is food after dialysis and I did not have to cook it!)

Len wanted Greek, so that's what we had. Slovakia plate. It's was pretty good. I had to seed the tomatoes and the cucumbers (he's used to me playing in his food), but it said it tasted good and he is now ready for a nap.

I made up a dish. Pork chops browned with onons & celery & mushrooms, some water added after browning, a pan of cornbread stuffing baked, then a handful of cheddar cheese (sharp!) thrown on top of the chops, and mushroom mixture. Actually, I added the cheese to the mustrooms, let them melt, then added the cheese to th chops and then added the melted cheese mushroom mixture on top of the chops.

What's everybody having for Easter dinner. We are going to my daughters, I made macaroni salad and pumpkin cheesecake. There's an old southern Maryland tradition of stuff ham, it's a corned ham that is stuffed with cabbage, kale, onions and red pepper, you poke holes in the ham and stuff it, then bake it for hours and hours. It's really good. Our family will have the normal, ham, turkey, chicken salad, mashed potatoes, pecan sweet potatoes, bunches of vegetables, rolls, and deserts out the butt. Len is looking forwarded to eating today. He is suppose to have labs drawn tomorrow but he says he doesn't care, this is the first time in 7 years that he has felt like eating, and isn't doing dialysis.

Only Chris & I here today (Matt's in Barcelona, lucky thing).  Chris is veggie so we had veggie toad in the hole, Mediterranean roast veg, new potatoes and cauliflower followed by fresh fruit salad (for me) and hot cross bun bread & butter pudding (for him).  He's gone to work now and I'm off to walk Molly. Happy Easter.

It's only three of us, and my son is the world's pickiest eater, so I'm doing ham steak instead of a whole ham.

Ham steak with mustard sauce; ratatouille; collard greens (for hubby, I can't stand them); sweet potato casserole (for me, hubby doesn't do 'taters of any kind); and three different desserts - carrot cake slice for me; yellow cake slice for my son; berries with cream and splenda for hubby. Guess I better start cooking pretty soon!

Ours was an almost didn't happen dinner!    We have it at my parent's house, but it's been weird since my mom died. My dad has NO concept of what needs to be taken care of, and he's severely depressed anyway, so he's not gonna care.  I had a really rough week, and was thinking of NOT coming, but my sister convinced me to anyway.  NOBODY bought a ham....I happened to have A slice in my fridge, so when we went there, I stopped and got it, and warmed it for my dad so he could have ham.  Everyone else had cheesy potatoes, baked beans,  corn casserole, crackers, bread, cheeses, applesauce, and brownies and upside down pineapple cake for dessert.

Man, this afternoon I was invited to my cousins home and she had three separate egg dishes, one with crab, one with sausage, and one with ground beef, also there was ham and a hashbrown dish along wit a fruit platter and a rice crispy treat shaped like a bunny. three differant deserts, champagne and wine, what a feast. After (11) days of hospital food I ate like a pig!! ....Boxman
