Tonight I'm having Chinese sticky rice with chicken and mushrooms, steamed in a big leaf and two steamed shrimp dumplings (har gow).  The place I get it from assures me that there's no salt or soya sauce in there.  Don't believe them 100% but it doesn't taste very salty, doesn't seem to make me thirsty and I dialyze again tomorrow anyway.  Canned peaches for dessert.

My daughter in law called and said she is cooking and bringing...this after a day at work too...yeah her...she makes a """killer"""" chicken, rice casserole that is ever so much more good than anything I have ever tasted....except vodka...pizza, beer...etc??? but it is very good.

03/2007 Fantastic Eye Surgeon in ND got my sight back and implanted lenses in both eyes, great distance & low reading.
Gortex 4/07.  Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.

Wow sticky rice, I used to have it when some of the asians would bring it in where I used to work, was great dipped in sweet sauce and very chewy. Can tou tell me how to make it.

I don't make it but my Thai cookbook says that you can buy Thai sticky rice in an Asian store, then you soak it in plenty of warm water for up to three hours (one hour minimum).  Drain it, wash again then steam it in a wicker steamer that fits on a saucepan.  Steam on med high for 25 minutes.  You could also use a strainer lined with cheesecloth but most importantly, the rice must be covered as it steams.

There are dessert recipes using fruit and coconut milk but that's not what I go for.  I like the Chinese dim sum version that puts bits of meat and reconstituted dried shiitake mushrooms inside the rice and then its all steamed together in a big lotus leaf.  I should try to make it at home and control my ingredients but it's so easy just to get it already made from a little place right where I dialyze.  Sometimes I have it for lunch on the machine.

i plan on smoking a beef brisket for 7-9 hrs along wit some grilled  skimp :oops; shrimp wit a garlic BBQ sauce  collared greens( steamed wit Turkey bacon a tad bit  of garlic & onion and a few shots of hot sauce) corn bread  all most forgot grilled corn on DA cob


tommorrow     i'm cooking a beef tender loin stuffed wit Gorgonzola cheese   rest TBA   ( to be announced)

Well what started out with just tasting the Chocolate Cool Whip ended up eating the whole container. It reminded me of chocolate mousse Never made it to my coffee though. I had a smokd ham  sandwich with mozzarella cheese again.

I'm thinking of getting more, not sure I want the Strawberry though. At least it's non dairy which is a good and bad thing for me.

Tonight was "artichoke open face" night.  I have been eating AOF's for years - ever since my stepmom discovered the recipe - they are so tasty and EASY.  Unfortunately they aren't for everyone here, but since my phosphorus is pretty stable and my potassium is low I can get away with it. 

To make:

Set broiler to high.  Brush an english muffin sliced in half with olive oil.  Broil until golden

Toast small handful of pinenuts in olive oil until golden brown.  You can do this either in the oven or on a stovetop.

Mix some diced tomato, diced red pepper, shredded mozzarella cheese and some marinated artichoke hearts (they come in little glass jars in the canned veggie aisle) with the toasted pine nuts.  Today I also added some herbed goat cheese and it was terrific.  Goat cheese makes everything better.   ;)

Spoon mixture on top of english muffins.  Put bake in oven and broil until cheese is nice and melted.

Enjoy and don't forget your binders!
