Roast chicken, jasmine rice and those french green beans with almonds.   If I have room later, there is a pint of Haagen Daz light blueberry cheesecake ice cream in the freezer that is calling out to me.

Tonight is going to be baked ziti - ziti noodles, ground beef, mushrooms, onion, sauce, cheese, etc.  Sooo good.

Last night i had me a small bowl of menudo with lemon and onions and a side order of corn tortillas, yummo,  :bandance;


What is menudo.

I was afraid someone was going to ask that, lol, only cuz i would have to describe what is in it  ::)  it is a spanish soup that contains hominy, tripe (cow's stomach lining)  :o pig feet (no, not pickled) :P and/or chunks of beef.... It is delicioso and grrrreat for a hangover ;) ;)  :wine;

I know, i know, sounds gross, and probably isnt the best thing for me, but it is so good.  :thumbup;

 :-X OMG there is no reason to be eating those parts of the animal. Sorry Susie I'm with Tubes. I wouldn't make a very good Mexican... you can beat me too! Although I love the Aussie take on Mexican.   :P Tacos and Burritos  mmmmmm

Tonight we are having Curry Meatballs, rice and steamed vegies.    :beer1;

this thread makes me sooooooooo hungry. i'm going to stop cooking and have dinner with you all. and even though i have a hispanic surname i'll pass on the menudo (sorry susie) i would like some of my mother-in-laws cheese and onion enchilada though. she was bedridden and i can still "hear" her yelling from the bedroom. "you be sure you soak those tortillas before you fry them!!!!!)

Tweetykiss, i appreciate your concern but please, come on, if i want someone to tell me what to eat and what not to eat, then i'd listen to my dietician!!!  Thanks anyways :)

We had a traditinal Newfoundland meal tonight. Most people here call it "cooked supper or dinner". You boil veggie (cabage, carrot, turnip(rutabega) and potatoes) in a pot with salt meat. Some places it is called salt briskett. I had a chicken roasted and gravy with it. You also make puddings from bread that you boil in the pot with the veggies. Can also do a pease pudding with it. Make it from split yellow peas. You put the puddings in a bag or wrap them in foil wrap. You can also have dumplings. It is delicious. Some cookbooks have a recipe for New England dinner. It is almost the same.

Tweetykiss you seem to always cook two different meals, one for your husband and one for you. Why is that?   :urcrazy;

Since he is the one on the restricted diet, I have to watch each and every bite he takes so I cook only low sodium recipes and no salt and limited protein.....in other words; kidney friendly diets.....

I on the other hand have no diet restrictions so I can eat everything in the grocery store but there are now two factors that may come into play which may change my diet 1) If he needs a transplant, I will have to watch my diet so he gets a good kidney since I will be his donor if all goes well...  2) I may not be able to fix for myself whatever I want since he is starting to crave his old meals like he asked me last night if he could have some of my  mac and cheese and I had to say a firm NO....he also wanted one of those bottled tamales you can buy at the store and that has over 900 mg. of sodium so I may have to give up my favorite foods so he is not reminded of his "good ole days"......

I almost always have a modified menu from what I make my husband too.  No reason for him to suffer from  my restrictions.  My health declines pretty rapidly when I go off my diet and eat what he eats.  

He had cheese pizza and salad with ranch dressing last night.  I had a small bowl of rice and some fruit.  :-\
