Homemade Belgian waffles.  I even made my own strawberry topping, which was super easy, and had to be healthier than the store bought version.  I topped the waffles with whipped cream and sprinkles of chopped up Hershey bar.  I was feeding my friend and her two kids, so I was looking for something kid-friendly.  The kids inhaled their food so fast, I think they teleported it into their tummies!

Oh, yes, please, everyone come!  I used a different recipe for the waffle batter - my favorite one vanished when I thought I was moving and packed everything up.  The recipe I used said it made three 9" waffles.  My waffle iron isn't quite that big, but I figured with 4 of us to feed, I'd better double the recipe.  It made 16 plate sized waffles!  I took half a dozen next door, but I still have lots leftover!

I just had pre packaged grits (sodium I bet) with a dab of smart balance.  Then I ate two slices of apple.  I need to find some protein now.  I do need to change my eating habits.

Are Waffles protein?

Seriously, any protein additives you could put into things like waffles... or fudge... or brownies.

Waffles are not protein, they are mostly carbs/bread.  There is a bit of protein from the eggs and milk, though.  You could add protein powder to the mix, though.  There's a thread on here that talked about the best protein powders.  I'll see if I can find it and bump it.

Here's the waffle recipe I used - don't double it unless you have a dozen to feed!

2 eggs
2 cups flour - I used 1/2 all purpose and 1/2 whole wheat
1/2 cup melted butter
1 and 3/4 cup milk
1 tbsp brown sugar
4 teaspoons baking powder
1/4 teaspoon salt - I used only a pinch - they tasted fine.

Gotta have a waffle iron, of course.  Don't forget to spray it.  It you don't want to eat in shifts, as the waffles come off the iron, heat the oven to 300 and store the waffles on the rack until you are ready for everyone to sit down.

Topping - I didn't have a recipe for this, so the amounts are best guesses of how much I used.
1 bag of frozen fruit - blueberries, strawberries, or any mix you prefer.
1 cup sugar
1 cup apple juice
1 heaping tablespoon of cornstarch.

Bring to a boil over medium heat, stirring constantly.  Remove and serve on waffles.  Can be made ahead and served cold as well.

For best results, use spray cream on top of the berries.  Yummy and pretty!

Matthew made some southern chili. Very good. Lots of tomato's, beans, and sodium. So of course it was good. Haha I am sticking to my two cups!  (maybe  >:D)
