Ohh sounds good - what if you don't have the spring-form pan? Would it stick to a regular pan?
I'm not sure okarol, I have never tried it. Maybe spray some baking spray on pan. Let me know if you try it.  :cuddle;

Could I use Frozen Blueberries? Fresh ones are about $6 for 250g at the moment. And is all-purpose flour Self-raising flour?    :)

I have used frozen before, I let them thaw out and added a little extra flour. No all purpose flour is not self rising. Self rising has the baking baking powder or soda already in there. I don't think I would use it.  :cuddle;

I didn't get to make the cornbread and chicken the other night. So that is that is what I am making tonight. With some mixed veggies.

Yummy...

And Willie that cake sounds really good, my boyfriend loves blueberry pie so i am gonna try and make it for him sometime next week. Thanks for sharing

Roasted cauliflower        better than popcorn

1 head cauliflower  cut into florets
2 tablespoons olive oil
1/2 tsp sea salt --- I used no salt
1/2 tsp pepper

oven to 400
wash, dry cauliflower
in a small bowl toss with olive oil - add salt and pepper
spread cauliflower on a baking sheet
separate cauliflower --- single layer
bake 25 minutes
toss and turn with tongs after 15 minutes

bake cauliflower at a high temperature and it will develop a caramelized crust

make on an empty tummy b/c this is hard to stop eating

Green apple chicken salad on homemade bread.  Fresh strawberries with melted ghiridelli chocolate for dessert.  Tasted awfully good for something that was reasonably healthy!

OMG that sounds wonderful....sounds even better than Spam.   I had a little salad with tiny slices of left over beef and some sweet potato curly fries (salt free).  Not the worse thing I ever ate.

I should not, repeat NOT have bought ham, even if it was drastically on sale!  Tooooooooo much salt!  I've been doing really well lately at eating mostly chicken and turkey, with a little lean red meat in the mix.  I bought the ham because of the great prices at Easter- I try to watch the sales to make my food stamps stretch as far as possible, but I don't think this was worth it.  I'm too thirsty!  Ah, well, live, learn, and put most of it in the freezer to bring out a little at a time.  I don't get as thirsty when it's cooked into something, so I'm making all kinds of casseroles and soups out of it.

Tonight, big surprise, I'm having a ham casserole!

Ohhhh...I love ham but sometimes get a headached...I think the salt..and get this...today I was told you need to eat more sodium or else we can give you a salt shot...I opted for hmmmm....french fries but forgot.     :rofl;

Gortex 4/07.  Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.

One slice of multigrain toast (heavy on the pumpkin seeds) with smashed lime avocado guacamole, a big salad with homemade vinaigrette and for dessert a serving of unsweetened Fruitsations applesauce mixed in with a low-fat blueberry yogurt and some psyllium fibre.

Uldall-Cook catheter inserted May 2008
Haemo-dialysis, self care unit June 2008
(2 1/2 hours X 5 weekly)
Self-cannulated, 15 gauge blunts, buttonholes.
Living donor transplant (sister-in law Kathy) Feb. 2009
First failed kidney transplant removed Apr.  2009
Second trx doing great so far...all lab values in normal ranges

INGREDIENTS
oil, for greasing pan
8 boneless, skinless chicken breast halves
1 (8 ounce) package cream cheese, cut into 1/2 inch slices
1 (8 ounce) package Cheddar cheese, cut into 1/2 inch slices
1 cup milk
1 1/2 cups Italian seasoned bread crumbs
1/2 cup grated Romano cheese
1 tablespoon minced garlic
3/4 cup butter, melted
2 tablespoons lemon juice
1/2 teaspoon garlic salt, or to taste
1/2 teaspoon paprika (optional)
 
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly coat a large, shallow baking dish with oil.
Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. I pounded it out thinner. Place one slice each of Cheddar and cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.
Pour milk into a shallow bowl. In a separate bowl, combine breadcrumbs and Romano cheese. Carefully dip each breast first in milk, then in breadcrumb mixture, patting lightly to firmly coat. Place breasts side by side in a single layer in pre-oiled baking dish, tucking edges under to seal.
Melt butter in a small saucepan over medium heat. Stir in lemon juice and garlic, and drizzle evenly over chicken. Season breasts with garlic salt and paprika, if using.
Bake in preheated oven for 30 minutes, or until no longer pink in center and juices run clear.

jbeany when I buy ham I always cut it in 2 pieces and put it in a big pot of water. I boil it and throw away the water. Fill up the pot again , boil it and throw away the water.  I do that 3 or 4 times and it removes a lot of the salt.

Hmmm - sounds like a good idea, del.  I try that with the ham I still have in the freezer.  I pitched the last of the ham casserole I had made - much too salty!  I hate to throw out good food, though - I don't have the budget to waste!
