Tonight an appetizer of fried zuchini, chicken strips, and chips with a spinach cheese dip, then crab cakes, mashed potatos, coleslaw, corn chowder, and bread.

Homemade pizza tonight. I made one with pepperoni, shrimp, alfredo sauce and cheese, for Christy. The other one same only with homade pizza sauce and onion, for me and Josh.

Lamb chops marinated in garlic, oregano, lemon juice,olive oil and  roasted potatoes and salad , now just waiting for allan to come home from a ride so I can put the chops on !

Since it has been so super cold here, i made a great big pot of homemade chicken soup with all the veggies, i hate to toot my own horn but...............damn it is gooooood :P  ::)

I double leech- i soak them - half a pot of potatoes to a full pot of water for 6 or 7 hours, changing the water a couple of times....then I bring them to a boil, pour off the hot water, then fill with cold water and boil until tender, then pour off that water- then I either drain and dry, and fry, or mash with butter and non-dairy creamer. Leeching removes most of the potassium. Always peel the potatoes as a significant amout of potassium is in the peeling and will not leech out.

Tonight i had lunch with hubby at work, we had Mickey D's.  I ate a regular #1 (Big Mac) no cheese with a light lemonade and 8 renagels  :o

I beleive I read somewhere its about 150 mg of potassium per serving and a serving is about 1/2 cup-
