As a new caregiver of a dialysis patient and an avid cook, I am having to learn some new tricks!

Here's a little "salsa" recipe I came up with the other night.  We had it with fish, but it would also be good with chicken.  The goal was to come up with something that didn't involve tomatoes and that tasted good without much salt!  I calculated the nutrient/mineral contents using DietSleuth, which I found on the web.  They use information from the USDA database.  If you want more details on that stuff, let me know. 

I actually made the recipe "to taste" and have estimated the proportions for the recipe given below.  You can add more or less of something, like garlic or ginger depending on your personal taste.  Depending on who's eating you may get more or less servings.  My guys have big appetites :).  Please let me know if you try it and if you like it.

Green grape salsa (4 servings)

3/4 cup green grapes (slice each grape into three or four pieces, crosswise)
3 medium green onions (scallions), chopped
2 tsp grated ginger
1 clove garlic, minced
juice of 1/2 lime
2 tsp olive oil
pinch of salt (not included in analysis)

Here's my estimate of the content per serving:

0.5 g protein
7 g fat
7 g carbs
88 cal.
10 mg phosphorus
99 mg potassium
3 mg sodium (will be more if you add salt)
