Pumpkin Pie
4 extra large eggs
1 can (29 ounces) pumpkin
3 cups evaporated milk
1 and 1/2 cups gradulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon ground cloves
2 unbaked 9-in pie shells
1. heat oven to 350
2. in large bowl, lightly beat eggs until well blended - add pumpkin, milk, sugar, cinnamon, nutmeg, salt, and cloves - mix until well blended-
pour into pie shells
3. bake 1 hour or until knife inserted in center comes out clean

Lost vision due to retinopathy 12/2005, 30 Laser Surg 2006
ESRD diagnosed 12/2006
03/2007 Fantastic Eye Surgeon in ND got my sight back and implanted lenses in both eyes, great distance & low reading.
Gortex 4/07. Started dialysis in ND 5/4/2007
Gortex clotted off Thanksgiving Week of 2007, was unclotted and promptly clotted off 1/2 hour later so Permacath Rt chest.
3/2008 move to NC to be close to children.
2 Step fistula, 05/08-elevated 06/08, using mid August.
Aug 5, 08, trained NxStage and Home on 9/3/2008.
Fistulagram 09/2008. In hospital 10/30/08, Bowel Obstruction.
Back to RAI-Latrobe In Center. No home hemo at this time.
GOD IS GOOD

Chocolate Icebox
2 and 1/2 cups milk 3 extra large eggs
1 and 1/3 cups granulated sugar 1 teaspoon vanilla
1/4 cup unsweetened cocoa 1 cup miniature marshmallows
1 tablespoon butter or margarine 1 baked 9-in pie shell
7 tablespoons cornstarch sweetened whipped cream
6 tablespoons water chocolate curls or shavings
1. in medium saucepan combine 2 cups of the milk, sugar, coca, and butter- bring to a boil over med heat
2. in medium bowl min cornstarch and water until cornstarch is completely dissolved - stir in remaining 1/2 cup milk -
whish in egg yolks and vanilla until well blended - gradually add to mixture in saucepan, stirring constantly with wire whisk
cook, stirring constantly about 2 minutes or until mixture is thickened and smooth - add marshmallows and stir until marshmallows melt and
mixture is smooth
3. pour into pie shell - press plastic wrap directly onto filling
refrigerate for at least 2 hours
4. remove plastic wrap - top with whipped cream and garnish with chocolate curls
the plastic wrap prevents the forming of a thick "skin"

Lemon Icebox Pie
*be sure to use fresh lemons for the filling, as we do, bottle juices are not the same
1 can (14 ounces) sweetened condensed milk 1 teaspoon granted lemon peel
4 extra-large eggs, separated 1/4 c granulated sugar
1/2 c fresh lemon juice one 9-inch graham cracker crust
( 3 - 4 lemons)
1. heat over to 350
2. in medium bowl. combine milk, egg yolks, lemon juice, and lemon peel - mix until well blended - pour into crust
3. bake 5 minutes - refrigerate at least 2 hours
4. heat oven to 350
5. in large bowl beat egg whites until soft peaks form - add sugar, a tablespoon at a time, beating constantly until soft peaks form-
spread over filling to edge of crust
6. bake 12 to 15 minutes or until lightly browned - refrigerate until served

1and 1/2 cup granulated sugar 1 and 1/4 cups drained canned crushed pineapple
3 extra large eggs 1 and 1/4 cups flaked coconut
2 tablespoons all-purpose flour 1 teaspoon vanilla
1 unbaked 9-in pie shell
1. heat oven to 350
2. in med bowl, beat together butter, sugar, eggs, flour, and cornmeal until well blended- add pineapple, coconut, and vanilla
mix well, pour into shell
3. bake 45 minutes or until wooden pick inserted in center comes out almost clean ( filling will be very moist)

2. in large bowl combine sugar, butter, and flour- mix well- add eggs- one at a time - mixing well after each addition- add buttermilk, vanilla
and salt - mix just until blended - do not overmix- pour into shells
3. bake 45 to 50 minutes or until wooden pick inserted in center comes out almost clean- do not overbake

Macadamia Nut Cream Pie
1 and 1/2 cups milk 1 extra large egg
3/4 cups granulated sugar 1/3 cup egg whites
1/4 cup macadamia nuts 1 baked 9-inch pie shell
1 teaspoon vanilla sweetened whipped cream
dash of salt 2 tablespoons toasted chopped macadamia nuts
1/4 cup cornstarch
1. in top of double boiler mix 1 cup of the milk, 1/4 c sugar, nuts, vanilla and salt - in small bowl whisk together remaining 1/2 c milk, cornstarch,
and egg until cornstarch is completely dissolved
2. in medium bowl beat egg whites until soft peaks form - gradually add remaining 1/2 c sugar, beating constantly until stiff peaks form
3. heat mixture in double boiler to scalding- stir cornstarch mixture and add to double boiler- stirring constantly- cook and stir 1 minute
- remove from heat- fold in beaten egg whites- pour into pie shell
4. top with whipped cream and toasted nuts
