I saw on here in another thread (I forget which) someone mentioned making a brown gravy using coffeemate and a bunch of black pepper...but the other ingredients weren't mentioned.

Does anybody else know how to make this?

I use the Dairy Delicious milk for gravy. It's low in phosphorus and potassium, and is regular 2% milk.

Here's a recipe that might have what you need:

From Living Well on Dialysis Cookbook

Country Biscuits and Gravy         
  Serves 4 - 2 Biscuits & 1/3 Cup Gravy Per Serving   
   
 
   
Ingredients:         
          
Biscuits
1 1/2 cups flour
2 teaspoons baking powder
2 tablespoons margarine
1/3 cup liquid non-dairy creamer
1/3 cup water

Gravy
6 oz ground beef
1/2 teaspoon sage
1/2 teaspoon pepper
1/2 teaspoon basil
1/2 teaspoon garlic powder
2 tablespoons margarine
2 tablespoons cornstarch
1 cup liquid non-dairy creamer         

Directions:
For biscuits, combine flour and baking powder in a bowl. Cut in margarine until mixture resembles coarse meal. Add creamer and water, mixing to form a dough. Knead on a floured surface 10 times. Roll dough out and cut into 8 biscuits. Bake on a greased baking sheet at 450°F for 10 to 12 minutes until golden.
For gravy, mix ground beef with spices in a bowl. Brown beef in a skillet over medium heat. Drain. Set aside. In the same skillet, melt margarine over low heat. In a small bowl, mix cornstarch with 1/4 cup creamer until smooth. Add remaining creamer and stir until smooth. Add to margarine in skillet and cook over low heat, stirring constantly, until mixture thickens and bubbles. Add beef and heat thoroughly. Serve over biscuits.

I still prefer sausage gravy. I make my own sausage that is kidney friendly.

Davita has a recipe for homemade suasage that is not horrible

I've tried the Davita recipe and didn't care for it. Sausage needs at least 25% fat in order to cook and taste like sausage.

it wasn't a recipie really- it was just when you make sausage gravy- as you would normally do- you use liquid non dairy creamer where you would otherwise use milk- it works for puddings too

1 1/2 lbs. ground pork (w/fat)
1 tsp. black pepper
1 1/2 tsp. Popa Dash(or salt)
1 tsp. sage
1/4 tsp. cayenne (omit for mild)
1/4 tsp. ginger
1/4 tsp. thyme
1/4 cup cold water

Mix thoroughly and form into patties. They can be frozen for later use.

Hey Donnia, watch the fat content there.  Sausage is fatty by nature and prednisone makes you want to eat more of everything so I always found it easier to go lower fat and eat more for the same number of calories.  If you make your own sausage meat as Flip suggests you might cut back on the amount of pork fat but know ahead of time that it won't be as tasty.  I'm only saying this because of your post about  your appetite post-transplant and your concern about gaining weight.  My pre-dialysis appetite was non-existent, my dialysis appetite is very manageable but my post-transplant appetite was off the charts due to prednisone.
