Sweet Potato Pie

Sweet Potato Pie

2 cups mashed sweet potatoes
1 cup sugar
1/2 stick butter
2 eggs
1 tsp. vanilla
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. ginger
1 cup milk
1 unbaked pie crust

Combine sweet potatoes, sugar, butter, eggs, vanilla, salt and spices. Pour the mixture into the pie crust. Bake @ 350 degrees for 40 to 50 minutes. Great with cool whip or a little ice cream.

* I'm not a fan of sweet potatoes but I love this pie.
