I just make the stuff out of the box but only sprinkle a forth of the powder on.  It works and with a little ketchup you can't tell.

since i don't eat it every day, i just make it and don't worry about it. the problem is many people don't know what a little cheese means. there really isn't any thing you can't eat, just things you shouldn't eat often or in large quantities. remember to take your binders and enjoy.

I dont have a real recipe, except I do know that if you sprinkle Panko bread crumbs on top before you bake it, they add a whole wonderful crunch to it.

bake?!?!?  what is this "bake" you speak of??   ;D

Everyone knows that good mac & cheese is stovetop only, baby!   :bandance;

Here is a cheese substitute that I use occasionally (its a bit high in sodium for my diet): http://www.daiyafoods.com/our-products/cheddar.  It doesn't look like it has any phosphate or potassium based ingredients and is vegan.

I don't have a specific recipe, but this is what I do for stovetop mac & cheese:

Boil macaroni. In a separate saucepan, make the cheese sauce:

Make a roux by combining equal parts butter and flour and cooking over medium heat until nutty beige. Add almond or rice milk, stir until it becomes a smooth white sauce. Add Daiya vegan cheese (cheddar flavor) a small handful at a time, stirring each addition until the cheese melts into the sauce. Add a little bit of real sharp cheddar or other cheese of choice for flavor. Taste, add salt if it needs it (it probably won't - plenty in the cheese).

Drain the macaroni and add to the cheese sauce. Stir to coat. Add broccoli or ham or bacon or foie gras... mmmmm.  :bandance;  :beer1;

Basically, take any mac & cheese recipe that involves adding cheese to a white sauce, and use almond/rice milk and vegan cheese, with perhaps a little real cheese.

I came across a recipe that uses pureed cauliflower instead of milk, to cut the dairy and give you some fiber.

I would cut the cheese with some cream cheese and some sharp cheddar for flavour.  Just weight out your cheese to calculate your portion size.
