LOL.... Having lots of shrimp and knowing it is renal safe (watching potassium especially), I would love an idea for dinner! Easy and light and it is hot as heck today lol. Have pasta on hand, garlic, things like that..

Hmmm....I would make a quick shrimp scampi!  Parsley, butter, garlic, shrimp served over pasta.  Yum, yum!  Or how about shrimp deJohnge - place shrimp in baking dish, top with mix of garlic, melted butter, breadcrumbs and parsley and bake til shrimp are done and top is brown. 

I have a sudden craving for shrimp LOL
