I've tried Davita's site, looking for renal friendly recipes for parsnips, but a search comes up with nothing.  I see by the USDA's list that parsnips are high in K like potatoes (which I expected to be the case), so I'm wondering if you can peel and dialyze parsnips like you can potatoes, and then make a parsnip mash.  Anyone tried this?  Anyone have any renally friendly recipes for parsnips.

I love parsnips and haven't had then since leaving England 7 years ago.  I'd like to make some for Christmas dinner.

I'm pretty sure parsnips will dialyze/leech like potatoes. Just peel them, cut them up, and soak them like you'd do potatoes, then boil. Should make a fine mash.

I don't have any recipes for parsnips - I've only ever used them in making chicken stock.

I'd leach them by soaking but I'd use quite warm water for the soak, then boil.

I had never bothered eating potatoes because it just seemed to be sooo much bother to dialyze them.  I merely eat rice, instead.  But I thought I might give it a go so that my husband could enjoy potatoes, so I popped over to DaVita's website to get the lowdown on the technique.  I was surprised to read that using warm water is more effective at leaching out K than cold water.  The things you learn!  Just goes to show that the devil's in the details.
