A Summertime Smoothie for Diabetics and CKD Patients

When the weather heats up, cool down with this Very Berry Tofu Smoothie. It only takes a few minutes to whip up in the blender, will please any crowd and follows dietary guidelines for diabetics and CKD patients. To summer fun and good health!

If you are on dialysis, please check with your dietitian or other member of your health care team before using this recipe.

 
Very Berry Tofu Smoothie

Serves 4 (1 Cup per Serving)

Ingredients:
1 lb fresh strawberries, cleaned and hulled
2 cups blueberries
9 oz tofu, silken, extra firm
1/2 teaspoon ground ginger
2 pinches of red pepper flakes
1/4 teaspoon rum extract
1 tablespoon honey
1 teaspoon lemon juice
1/2 cup ice

Directions:
Blend all together and serve.

Saturated fat 0.2 g
Monounsaturated fat 0.3 g
Polyunsaturated fat 0.8 g

More info:

In general, soy foods are safe; however for people with CKD, some soy foods are better than others. People with CKD can safely enjoy tofu, soymilk and soy yogurt. Soy protein fortified breakfast cereals can also be an additional source of protein and nutrients for people with CKD.

Soy nuts, whole soybeans, soy flour and fermented soy products, and pastes are high in potassium and phosphorus, minerals people with CKD should limit in their diets. Soy-based sausages and burgers, packaged marinated tofu and many Asian dishes are typically high in sodium. People with CKD should eat these soy foods in moderation.

Remember, when making any diet modification, or if you have any questions or concerns, always check with your doctor or renal dietitian before making these changes.

Tofu, soft  2-3/4" x 1" =
  Protein           8 grams
  Phosphorus  110 mg

Tofu, firm  1/2 Cup =
  Protein          10 grams

Zach is pretty educated on these things
but I will never give up tofu in hot and sour soup
but you can keep the tofu in everything else

Tofu is fine.  See my nutritional listing.

Açaí or aqai from allnutri.com:
"... The acai berries (pronounced ah-sigh-ee) is loaded with vitamins and minerals, such as many of the B vitamins,Vitamin C,Vitamin E, iron, potassium, phosphorus and calcium.. "

Still can't find specific amounts of potassium or phosphorus for 100% pure aqai berry.
If you search the internet, there are lots of reports of "fake" aqai berry products.

Last week I tried the kool aid made into ice cubes and dropped into diet 7-up. It was really bad. I dont think I messed up the Kool-Aid ( Is that even possible).
