For breakfast a spread in the conference room...eggs, pancakes, bacon, and a big birthday cake.  Then it was "Take Your Kids to Work" day today but only four kids showed up...usually we have about a hundred...so out goes the call to assemble on the patio for pizza, pasta, meatballs, garlic bread, salad and all the soda you could drink.

Have I been bad today?  I don't have a dietician anymore!  That'll be 12 units of Novolog please.

I had one of my "Dream Dinners" Apricot Glazed Pork Chops with corn fritters.  By the time the Pork Chops were done there was this caramelized glaze on them that was so good.  This was a six serving menu, so I've got plenty left over.

Beef Round Steak, 3 oz, 1/2c steamed broccoli, 3/4 cup steamed baby carrots, 1/2 c brown rice, and salad. Yummy.

Did you guys ever think about how often kidney patients talk about food?  Maybe that is why this thread is so popular.  I remember talking about food constantly in the dialysis unit.  Everyone knew each other's favorite foods and restaurants and food was always being brought in and shared with the patients.  Kinda makes my hungry just thinking about that.  Seriously...this stuff doesn't happen every day.  Today was sort of an exception to the rule.  But it happens often enough!  :thumbup;

Tonight i made a roast with a side order of roasted potatoes and baby carrots, refried beans and beef rice-a-roni,  heated up some flour tortillas, cut up some cucumbers and took it to my hubby for lunch,  :P  ;)

Tonight, baked boneless,skinless chicken breast, season with cayenne pepper and a yummy rub. Steamed baby carrots and gren peppers and onions. Salad.  Mmmm

Bologna sandwhich is always good.  :P

I'm making "Fried" chicken tonight.. it's covered with cornflakes and cooked in the oven. I'm also having steamed veggies and salad. Mashed potatoes and cream corn for the rest of the family.

I used to make what I would call a Bologna boat or bowl when I was younger.  Still do once in a while.  I take a single slice of bologna (the kind with the red plastic works best, but any kind will do), and a slice of American cheese.  I'm sure other cheese would work for this too, but that is what was in the house.  Put the bologna on a microwave safe plate and put the cheese on the bologna.  Pop it in the microwave and cook it on high for how ever it takes for the bologna to curl up into a bowl shape and the cheese to melt inside.  The outside edges of the bologna may get a little crispy, but it is oh so yummy.

First time I've read this thread.  We do seem to talk about food alot!!  Every dialysis unit has someone watching the food network channel, ever notice that?  And we can't eat half of it!  Tonight was shrimp and pasta in a lemon, butter, fresh basil & white wine sauce with garlic bread...  Yum -o!!!
