artichoke hearts and red onions with lemon vinaigrette, linguini with my italian friend's mother's homemade tomato sauce and parsley garlic meatballs (the lightest in the universe).  She bottles the basic sauce herself in the summer from fresh home grown tomatoes.  I love this sauce but obviously can only have just a little now but still worth it.

ENCHILADAS

Good for dialysis folks

12 Corn Tortillas (no salt in these or very little)
1 can Enchilada Sauce (mild or hot)
Cooked small cut up pieces of chicken breast
Cooked white rice
Frozen Vegetables (small carrots, corn, green beans)
Cream Cheese

Spray 13X9 baking pan.  Preheat oven to 350.  On a plate pour 1/2 cup of sauce.  Dip corn tortilla on both sides and place on another plate to fill.  Put cooked chicken, rice, veggies, small chunks of cream cheese.  Roll and place seam down in baking dish. Repeat until dish is full; about 6 enchiladas.  Pour remaining sauce over enchiladas and sprinkle with a small amount of cheddar cheese if desired.  (take binders)  Bake for 25 minutes.  Serve with sour cream on the side.

The second breast from the rotisserie chicken I bought yesterday.  I made sure to get one that was really well cooked with patches of almost burnt skin.  YUM!!! I had corn and mashed potatoes on the side with brown gravy.  Mmmmmmm comfort food.

I'm going to have a six inch veggie sub with a speck or two of southwestern (chipotle) sauce and a few black olives.  I'm going to take it with me to The big D.  Tea to wash it down, and Kleenex in case the new line doesn't work.
