Thought I would start a new thread about this so it doesn't get lost in the cookbook thread. I have a few recipes saved that are my own that I will probably consider putting in my book (considering they are my own recipes). What I would like is ideas from everyone about what sort of foods you would like in the book. They must be suitable for dialysis pts. I also want to keep it healthy, but I may add a small section for the occasional indulgence! I really want to make a book containing everyday foods, things that are easy to make and relatively cheap. I also don't want to fill it with recipes that are just too tempting to stop at one serving if you get what I mean :)

Please feel free to post here what you would like to see. I am also thinking I could put in a few member recipes if anyone was interested. All credit would be given to them of course!

Amber, my suggestion is to make recipes for 1 person.  I get these dialysis cookbooks and they are for 12 servings!  One or two servings I think would be a good idea.

Pasta Dishes, desserts....  that is what I like.

Chocolate recipes please!  Pasta dishes that are different.  Meat dishes.
Easy to make with less than four ingredients and only three or four steps. 
Easy to prepare dishes.

Can I boil it, mircowave it, open a can and heat it or grill it?

Thankyou for the ideas. I do have a couple of pasta recipes that may be suitable, and chocolate recipes!. I will do my best to limit servings to less than four. Most of my recipes are very easily broken down. I mostly cook for 1 or 2 people anyway so that will help me. Im trying to pick recipes on the basis of fluid content as well. I wasnt sure if I would include soup/stew recipes or not? Which reminds me I have no idea if stock contains much potassium. So far Ive got a chocolate cake recipe and I could probably dig up a few others. Just not too many, as the idea of the book is not to tempt you to polish off the whole lot lol

How much cheese is too much? I never really took any notice of my dairy intake.

It would probably entail a specailly made sauce (still would have phosphate but perhaps less .. which might help) and maybe only a certain type of cheese (which is the safest out of all the cheeses that would still taste good on pizza???)

Im not sure angie, dont the more wet cheeses like cottage cheese and ricotta have more phosphate? Just a guess. Im trying to get up the courage to approach my old dietition about some ideas for the book.

Chilli shouldnt be too hard joe, I actually have never made it, but my brother makes a scrumptious chilli which I could use.

Thanks angie! Thats a huuuuge help with the nutritional values. Theres so much you can do with a pizza. I think pesto is a good option too, but you might need to make it yourself so theres no salt added.

and there are other reduced-potassium tomato sauces out there, for example:

for cheeses, it seems like some could be ok (see below), but that living well recipe is one of the best renal pizza recipes i've seen!

mozarella, whole milk (per oz)- 22mg K, 100mg PO4

parmesan, grated (per oz)- 12mg K, 72mg PO4

provolone (per oz)- 39mg K, 141mg PO4

ricotta, whole milk (per oz)- 32mg K, 48.5mg PO4

Most commerical  pizza sauces and tomato based pasta sauces have roughly 120 grams of K per ounce and are loaded with Na.

You can make your own sauce though.

I use S & W no salt cut peeled tomatoes.  Blend them down and add own spices and stuff.

From their label it lists the amount of K per serving.


Per 119 grams  serving  (4.25 ounces)
105 grams of K p
30 milligrams of Na.
