Cream of Crab Soup - kidney-friendly
Serves 10; 1 Cup per Serving
Ingredients:
1 tablespoon unsalted margarine
1/2 medium onion, chopped
1/2 lb imitation crabmeat, shredded
1 quart low-sodium chicken broth
1 cup non-dairy coffee creamer
2 tablespoons cornstarch
1/8 teaspoon dill weed
Melt margarine in a large cooking pot over moderate heat. Add onion and cook, stirring, until soft. Add crabmeat and cook 3 minutes, stirring constantly. Add chicken broth and bring to a boil. Reduce heat to low.
Combine non-dairy creamer and cornstarch in a bowl. Stir until smooth. Add to soup and increase heat to moderate, stirring constantly, until mixture comes to a boil and thickens. Stir in dillweed.

I've printed off the recipe and I intend to try it soon. Don't know if I'll be able to limit myself to just 1 cup though! It sounds just too good.

Yes, liquid or powdered. From Wikipedia:
Non-dairy creamers are substances which are intended to substitutes for milk or cream as an additive for coffee, or other beverages; they do not contain lactose, and are therefore not considered dairy products. Non-dairy creamers typically contain sodium caseinate, and a milk protein (casein) derivative that does not contain lactose. Other common ingredients include corn syrup and vegetable juice solids. Some creamers are based on soy candels rather than on milk fat.
Nestlé Coffee-Mate, introduced in 1961, was the first powdered non-dairy creamer. Today creamers are available in both powder and liquid forms, and with various flavorings added.

I've bought the ingredients to make this soup and will let you know how it turns out. It's going to be cold here the next few days (high tomorrow of +4 degrees F) so some warm soup will probably be sounding pretty good. Because I have such a problem with high calcium levels but was a milk and cheese lover (still have problems staying away from cheese!), the dietitian at my unit recommended a frozen non-dairy coffee creamer called Coffee Rich. I use it all the time in my coffee and have also used it in other recipes that call for milk. I prefer it over Coffee Mate and usually have 3 or 4 cartons in our freezer at all times.
