Zach how do you skin a green pepper, Boil it first?

I know you can broil them lightly or grill them and rub off the skin, not sure how else. Recipie sounds great.

It works best with a gas stove top. Set the pepper right on the burner, directly over a low flame. Turn until it's evenly charred all over. The charred skin peels right off. Fast, quick, and yummy!

If you then stick the pepper in a ziploc bag for a couple minutes, it seems to be a little easier to peal. You can usually pull it off with your fingers, or scrape with a knife edge.
I love chili.

And thus I need a good girlfriend who can cook and has great insurance.
Sounds good, but don't know if I can handle Tobasco sauce anymore. For some odd reason I have trouble eating that type of pepper thses days and will get sick to my stomach. I miss those foods.

I've used cinnamon before when cooking meat. Never had the smell though. In some marinates, cinnamon is an ingredient. Steak came out good, smelled great. Of course I was using Whiskey as a marinate base though :shy;

my family loved it ---- I think the bacon must have given it added Texas smoked flavor -- use smoked bacon not maple
my Aggie son wanted me to make more to freeze for him to eat at college so of course, I did

it does sound good, but i think i would miss the beans. i make chili, but not often and say "to hell with it" and eat the beans. with that said, i do appreciate zach's taking the time to post the potassium, phosphors content.

I like to make up a big pot and freeze half for later. Pre-dialysis, my usually recipe involved 3 or 4 cans of beans. Now, I make the same size pot, and only add one can. It still seems like normal chili, but there's just far fewer beans to mess up my renal diet.

I don't really like beans in chili but I have two quick questions... I put chicken stock and no sodium added tomatoes. Is the chicken stock OK. Also I like to eat chili over spagetti. How would spagetti fit into this diet? I really need to visit a dietician and find a better book than the one DaVita gave us.
But beans (I like pinto beans) -- Central Market has a can of about 1/3 regular sodium beans. I rinse the goop off, cook a little brown rice and mix it all together with seasoning. Again, I need to check on the beam and rice thing.

White rice is on the approved list. The beans, maybe. The problem with diet books and the dietitian's recommendations is that they like a "one-size-fits-all" approach. They tend to hand you a list of stuff not to eat, and don't tailor the diet to your own personal restrictions. If you keep track of your labs, you can see for yourself what things you need to restrict. Personally, my potassium is usually low or normal, regardless of how much I eat of things that have high potassium, like tomatoes, potatoes and citrus fruit. I still eat them in moderate quantities, just to keep from overloading, but I don't have to avoid anything in particular. I have more issues with phosphorous. I've had to cut back severely on dairy foods to keep my levels normal. With the right phos binder, though, I can still have as much meat as I want, and I've been able to have small portions of beans on a pretty regular basis as well. You're still pre-dialysis, dan, so hopefully, you still have a bit of leeway before you need to start making huge diet adjustments. Get familiar with your lab values, and then start tweaking your diet to keep them in line. Don't just start eliminating foods from your diet based on what the books say is good or bad for a dialysis patient.

Chicken stock is fine, just watch the sodium and MSG.
Add what ever you like. You can check their phosphorus & potassium levels at this site and add that amount to my nutritional totals:

Twirl, Skyline Chile restaurants put cinnamon in their recipe. Sometimes seasonings blend and add flavor but you can't taste the actual seasoning. Give it a try :2thumbsup;

Hey - has anyone done this with pieces of pork or stew beef? How about crockpot? I'm thinking about trying this with chunks of pork, a can of pinto peans and slow cooking it for a few hours. What do you think?

Curious as to why you put bacon in your chilli? And what no kidney beans (not even a little half size tin?)

The small amount of American style bacon adds a smoky flavor.
Bacon is used in a lot of Southern cooking.
Some people add 1/4 cup of brewed coffee for a little different flavor.
As far as beans, please add what you like to this recipe.
Just be aware of the phosphorus and potassium.

These 2 hot dogs are lower in sodium (less per serving than Zach's chili!) and in fat. They taste great, but I wouldn't suggest you eat them every day.
International Glatt Kosher - Reduced Fat & Sodium Beef Franks (250 mg. sodium per 2 oz. serving)
Abeles & Heymann Reduced Fat & Sodium Beef Frankfurters (360 mg sodium per 2 oz. serving)
I get them at a Kroger that carries a good selection of kosher foods.

Zach: Wonderful recipe! It also gave me a good base to work with, as I also tried it with a few of my own revisions based on what was in my pantry. Husband gobbled it right up!

Is it possible to cook your chili without using any meat or would that be a useless exercise ?

There are a number of people that wouldn't even THINK of adding beans to Chili.
Then again, there are a number of people that wouldn't even think of NOT having beans in their Chili.
They are both good. I like them both.
Kristina raises a very good question, vegetarian chili. I don't doubt that it is possible. It may take a couple of tries. More or less modifying a recipe for say Baked Beans. Adding a dash or two of liquid smoke and an adequate amount of chili powder.
I think the addition of the cinnamon a great idea. Not so much as you taste the cinnamon, but it would lend a slight sharpness to the tongue.
I use a trio of things to most of my tomato based recipes, brown sugar good mustard, and balsamic vinegar, in close to equal amounts. The three blend well together such that none stands out as identifiable, but the marriage makes for a tasty combination. I may have to experiment with adding that half a teaspoon of cinnamon.
I do have one question for everyone, that is fat content of the meats used. We have been trying to always get the very low fat ground, like the low 90%/ Some dishes, like chili, are almost expected to be 'greasy', and have little 'puddles' of fat collecting on the surface as it simmers. I don't need the fat, my cholesterol is always way too high. I find it such a pain to have to drain fat off after browning the meat so the very low fat to begin with is for me a real advantage.

Must be the chili powder... And some nights I want to be really bad and make a side of cornbread to be bathed in butter to go with it. Ooops, did I say that?? Gotta go shopping tomorrow...

Hi kristina,
The meat provides most of the protein that makes the chili a meal.
Without the meat it still makes a very tasty side dish.
Add some fresh-cut corn to give it a little "crunch."
Maybe some "meaty" type mushrooms, though they can be high in potassium.
Perhaps you can substitute the meat with some pan-browned veggie burgers, crumbling them into the chili.
But I'm not sure that they provide the same amount of protein, ounce for once.
Also, the product label may not list the potassium or phosphorus content of the veggie burgers, something we always need to know.
Let us know how you make this a vegetarian chili receipt.

Mmmmm Cornbread. I add sugar or hiney to my mix. Sometimes, if I'm in the mood, a small can of diced peppers also. Slather it with real butter, none of that fake margarine stuff.
We just had lunch at Two Dudes, the Big BBQ Pork Steak, slaw, and their cornbread that has real corn added to the mix. It's heavy, wet, delicious, gotta eat it with a fork cause you can't pick it up.
Gramma wants me to make spegetti tonigiht. I doubt it. Don't think I can eat again til tomorrow.

Meals that stick to yer ribs are best! Why? Because they're practical (you can get more than one meal out of them), tasty with full flavor and can even be added or mixed to different things to make another meal. They also taste even better on the second day..the spices and juices and peppers have had a chance to really soak in and flavor things up! I love those kinds of meals. I need to get me a big square cast iron skillet to make cornbread like my mother use to...nice big square pieces like cake that you can slice down the sides in half and slather butter on both sides. More cold winter weather coming, time to get more fixins for more chili again!

Wife tried to talk me into going to Wendy's. She likes one of their salads, I end up eating their chili. It's O.K., just not like I make at home.
She won't let me make it as it gives her 'gas'. So? She hates to 'release' at work in the School Cafeteria.

Have never forgotten this...During our training to use the NxStage cycler, my husband's stomach began rumbling and bothering him. The nurse walked in just in time to see him make a face and asked what was wrong. I told her his stomach was bothering him. She looked over at him and said "Oh, just let it rip, it's okay, we're use to it". She thought he had gas. He didn't. ???

Since I am a 'Guy', when I have 'gas' at home I just let it go. My house, right?
Not according to the 'Wife'. She would always nag me afterwards that I should have 'gone to the bathroom'.
One cay, after being married maybe ten years, I let one go. And this I will NEVER forget. This, the Mother of Our Children, whom I had NEVER ever heard 'fluff'. She looked at me with an EVIL Eye, lifted one leg, and RIPPED one off. Telling me "If you can do it then so can I."
I about fell over. Laughing.
That was about 25 years ago, maybe more. I lose count.

Zach's Chunky Chili calls for 1/2 teaspoon Tabasco sauce AND 1/2 teaspoon Tabasco Green Jalapeno sauce. My husband always says he likes "all things hot". Like I use to have to tell our old dog, I tell him to knock it off or he can go live somewhere else.

great recipe. It's hard to make chili when you're so used to using the beans previously. I now have to make chili without the beans and get used to using things like tomatillos and roasted red peppers. I usually use ground turkey, minced garlic and onions, tomatillos and roasted red peppers and then I sometimes add in a little pasta noodles.
