Hey - has anyone done this with pieces of pork or stew beef? How about crockpot? I'm thinking about trying this with chunks of pork, a can of pinto peans and slow cooking it for a few hours. What do you think?

Is it good on chili dogs?  :beer1;

Chili dogs are one of those food I *like*, but hesitate to eat now that I'm supposed to limit sodium. A lower sodium chili is a good start -- anyone know of hotdogs that aren't quite so full of sodium?

Curious as to why you put bacon in your chilli? And what no kidney beans (not even a little half size tin?)


The small amount of American style bacon adds a smoky flavor.
Bacon is used in a lot of Southern cooking.

Some people add 1/4 cup of brewed coffee for a little different flavor.

As far as beans, please add what you like to this recipe.
Just be aware of the phosphorus and potassium.

These 2 hot dogs are lower in sodium (less per serving than Zach's chili!) and in fat.  They taste great, but I wouldn't  suggest you eat them every day.

International Glatt Kosher - Reduced Fat & Sodium Beef Franks (250 mg. sodium per 2 oz. serving)

Abeles & Heymann Reduced Fat & Sodium Beef Frankfurters (360 mg sodium per 2 oz. serving)   

I get them at a Kroger that carries a good selection of kosher foods.

Thanks for the suggestions. I'll keep an eye out for them.

Zach: Wonderful recipe! It also gave me a good base to work with, as I also tried it with a few of my own revisions based on what was in my pantry. Husband gobbled it right up!

Husband had ESRD with Type I Diabetes -Insulin Dependent.
I was his care-partner for home hemodialysis using Nxstage December 2013-July 2016.
He went back to doing in-center July 2016.
After more than 150 days of being hospitalized with complications from Diabetes, my beloved husband's heart stopped and he passed away 06-08-21. He was only 63.

There are a number of people that wouldn't even THINK of adding beans to Chili.

Then again, there are a number of people that wouldn't even think of NOT having beans in their Chili.

They are both good.  I like them both.

Kristina raises a very good question, vegetarian chili.  I don't doubt that it is possible.  It may take a couple of tries.  More or less modifying a recipe for say Baked Beans.  Adding a dash or two of liquid smoke and an adequate amount of chili powder.

I think the addition of the cinnamon a great idea.  Not so much as you taste the cinnamon, but it would lend a slight sharpness to the tongue.

I use a trio of things to most of my tomato based recipes, brown sugar good mustard, and balsamic vinegar, in close to equal amounts.  The three blend well together such that none stands out as identifiable, but the marriage makes for a tasty combination.  I may have to experiment with adding that half a teaspoon of cinnamon.

I do have one question for everyone, that is fat content of the meats used.  We have been trying to always get the very low fat ground, like the low 90%/  Some dishes, like chili, are almost expected to be 'greasy', and have little 'puddles' of fat collecting on the surface as it simmers.  I don't need the fat, my cholesterol is always way too high.  I find it such a pain to have to drain fat off after browning the meat so the very low fat to begin with is for me a real advantage.

Zach's chili not only tastes good but acts as a sort of therapeutic experience for me. I like cooking it, I like eating it and I like the fact that my husband likes it, so it's rewarding for both of us. Makes for a little relaxation and offers something to be happy about. Must be the chili powder... And some nights I want to be really bad and make a side of cornbread to be bathed in butter to go with it. Ooops, did I say that?? Gotta go shopping tomorrow...

Hi kristina,

The meat provides most of the protein that makes the chili a meal.
Without the meat it still makes a very tasty side dish.

Add some fresh-cut corn to give it a little "crunch."
Maybe some "meaty" type mushrooms, though they can be high in potassium.

Perhaps you can substitute the meat with some pan-browned veggie burgers, crumbling them into the chili.
But I'm not sure that they provide the same amount of protein, ounce for once.
Also, the product label may not list the potassium or phosphorus content of the veggie burgers, something we always need to know.

Let us know how you make this a vegetarian chili receipt.

Cornbread with lots of butter sounds good with the chili.  YUM!!!

Cooking can be very therapeutic.
I have been working on a renal-friendly lasagna recipe.

Mmmmm  Cornbread.  I add sugar or hiney to my mix.  Sometimes, if I'm in the mood, a small can of diced peppers also.  Slather it with real butter, none of that fake margarine stuff.

We just had lunch at Two Dudes, the Big BBQ Pork Steak, slaw, and their cornbread that has real corn added to the mix.  It's heavy, wet, delicious, gotta eat it with a fork cause you can't pick it up.

Gramma wants me to make spegetti tonigiht.  I doubt it.  Don't think I can eat again til tomorrow.

Meals that stick to yer ribs are best! Why? Because they're practical (you can get more than one meal out of them), tasty with full flavor and can even be added or mixed to different things to make another meal. They also taste even better on the second day..the spices and juices and peppers have had a chance to really soak in and flavor things up! I love those kinds of meals. I need to get me a big square cast iron skillet to make cornbread like my mother use to...nice big square pieces like cake that you can slice down the sides in half and slather butter on both sides. More cold winter weather coming, time to get more fixins for more chili again!

Husband had ESRD with Type I Diabetes -Insulin Dependent.
I was his care-partner for home hemodialysis using Nxstage December 2013-July 2016.
He went back to doing in-center July 2016.
After more than 150 days of being hospitalized with complications from Diabetes, my beloved husband's heart stopped and he passed away 06-08-21. He was only 63.
